Cook Time: 1 hour at 250°F until internal temp reaches 165°F, flipping halfway.
Equipment: Z GRILLS 700 Series, Cherry Pellets
Total Cost: $22.00
Ingredients:
- Tortillas (sturdy type)
- Ribeye steaks
- 1-2 diced tomatoes
- 1 diced white onion
- 1 can drained black beans
- 3-5 tbsp diced jalapeños (seeds removed)
- Freshly grated Mozzarella, Medium Cheddar, and Extra Sharp Cheddar
- Parsley for garnish
- Salt and pepper to taste
- Blue cheese (Optional)
Instructions:
1. Season steaks with salt and pepper and let them reach room temperature.
2. Heat Z GRILLS to maximum (450°F+), place a cast iron skillet on the grill.
3. Once hot, add oil and sear steaks for 3-4 minutes per side until desired doneness. Let rest on a plate.
4. Layer tortillas in a grill/oven-proof tray, add onions, beans, tomatoes, jalapeños, and cheese.
5. Add bite-sized steak pieces and repeat the layering process. Drizzle any steak juices and cover with more toppings, especially cheese.
6. Grill at 400°F+ for about 15 minutes until cheese is melted.
7. Garnish with sour cream and parsley, serve hot.

My man.... so good.
Now I am going to have to try this. I think another good option for the meat would be a chuck roast, smoked @ 225 for 3-4 hours, then sliced thin.
