Mexican Short Rib Tacos on the Zgrills

Here's a complete and clear recipe for Mexican Short Rib Tacos:
Ingredients:
Short ribs
16 mesh black pepper
Kosher salt
Peppers
Roasted beef base
Water
Tortillas
Onion (optional)
Red cabbage (optional)
Cheese (optional)
Sour cream (optional)
Cilantro
Lime
Instructions:
1.Trim the short ribs by removing any thick fat or excess skin.
2.Season the short ribs generously with 16 mesh black pepper and kosher salt. Make sure to cover them completely as they will absorb the flavors during the cooking process.
3.Preheat the Z Grill to 250°F. Once ready, place the seasoned short ribs on the grill. Let them smoke for 1 hour.
4.Prepare a tin and rack. Place the split and deseeded peppers in a tin to extract flavor, then position the rack with the short ribs on the tin, and finally place them together on the grill.
5.After an hour and a half. Remove the short ribs and peppers from the tin and set them aside for later use.
6.In the tin, mix roasted beef base and water (or dark beer if desired) to create a flavorful liquid, then return the rack with the short ribs to the tin, allowing them to continue smoking at 250°F for an additional two and a half hours.
7.After a total cooking time of 5 and a half hours, check the short ribs for tenderness. They should be reading approximately 194°F and probe easily with a toothpick.
8.Remove the short ribs from the grill and get some of this juice from the tin, pour it into the blunder. And get our rest of our ingredients in. [Please note we'll have a full ingredient list down in description].
9.Transfer the short ribs to a cutting board. Chop the short ribs into bite-sized pieces, keeping some of the juices in the bowl. Then pour a little bit mixture from the blender.
10.Clean the cutting board and assemble the tacos. Place a small amount of the meat mixture onto a tortilla.
11.Add optional toppings such as chopped onions, red cabbage, cheese, sour cream, cilantro, and a squeeze of fresh lime juice.
12.Serve the tacos immediately and enjoy the flavorful Mexican short rib tacos!
