    Love your channel, mate - never yet tried one of your recipes that didn't work. If only because - unlike so many others - you don't insist that simple home meals require half of Sainsbury's in the pot. And not like so many KZread chefs so in love with the sound of their own voice they're halfway through the video before they get to the point. Have to say, though, I could probably get a meal out of the amount of potato you discard when peeling! 😄

    Well I'm going to have to be making plenty of this with the 12 tins of corned beef that I panic-bought yesterday due to Corona Virus. Btw, try adding about half a pack of that thinly sliced chorizo sausage that you can buy to take it to the next level, fry it before adding the corned beef. This is what I did when I used to make it. Just couldn't remember the rest of the process, so cheers!

    Pressure cook method if any one is interested - I have the ninja foodi 300UK (think that is the 7 in 1 but don't me on that) I used same ingredients except I was making this for 1 so I only used two/three potatoes I left the skin on. and 1 onion. I also did not have Dijon mustard so I used what I had which is american style mustard. I chopped up the onions & potatoes (rough large cubed, I tend to chop onions 'hunter style' as I have to pick them out if I share with my husky), put them in the pot with 1 mug water. pressure cooked them for 10 minutes and did quick release but no reason you can't leave them to natural release if, like me, you normally forget them ;) . drained out most of the water. I added the chopped corned beef and the 'sauce', gave it a good stir, then put on air fry at 180C for 15 minutes - but this would be personal choice depending how 'crispy' you like it oh and 30ml is about 6 teaspoons (2 tablespoons) and 50ml is about 10 teaspoons (just over 3 tablespoons [3.333]).

    why peel the spuds if it is a 'rustic' recipe? and you left a heap of flavor in the dutch oven which you could have captured by deglazing with a little stock and poured over the hash prior to putting in the oven.

  • @JA-rn5qv

    @JA-rn5qv

    You actually don't even need to boil the potatoes first either, they can just be chopped up in to nice small cubes, then fried with the onions & garlic until they are somewhat soft. All of those other sauces aren't necessary either, just garlic, onion, salt & pepper. That combination along with the flavor of the corned beef is just great as is. All of those other sauces just cover up the natural flavors that are already present. I think the reason he didn't deglaze the pot is because the sauces he added contain a fair amount of sugar and the bottom of the dutch oven was quite black at that point, so would have made a very bitter liquid.

    Brown sauce is a common condiment all over the UK and Ireland (it's almost always found on supermarket shelves next to ketchup, known commonly as red sauce) which is probably why he didn't think to explain what it is.. As I said, it's as common as ketchup and is basically used with the same purposes. It's a slightly spicy tangy tasting kind of sauce with a heavy vinegar base. HP is probably the most popular brand of brown sauce but there are many others (I prefer Daddy's) and most supermarkets have their own version.. It can be made at home from a set of ingredients though should any of you folks ever wanna give it a bash and you can find the most basic, common versions on Google. However, it's not absolutely necessary for corned beef hash to contain brown sauce and here in Ireland it's a rarity for brown sauce to be used in hash.. It's just personal prefers like some people add baked beans. I find it too overpowering a sauce for something so tasty and it's really not worth including it unless you LOVE brown sauce and don't mind it being the flavour that jumps out.

    Brown sauce is a vinegar based ketchup. Most famous brand of brown sauce is HP sauce. In England it gets used as an alternative to regular ketchup. I think what the Americans call 'steak sauce' is similar. Peace.

    It's basically just like steak sauce mixed with ketchup. All of those sauces are actually quite unnecessary, all you really need is onions, garlic, salt & pepper, which you fry all together and then add the potatoes. You don't need to boil the potatoes either, instead just chop them up in to small cubes, and throw them in to the pot with the onions, garlic and spices after the onions and garlic have cooked for a few minutes, then after you add the chopped up potatoes continue cooking and stirring until the small potato cubes turn transparent and soft. then you can add the meat and if you'd like you can continue frying the mix if you want the beef to brown a bit too, many people like the texture better if the meat gets fried for a bit. Then you can either cover it up for a few minutes at a reduced heat with a lid on it to allow all of the flavors to meld, or you can put in the casserole dish and bake for the same effect.

    Chef Jana I assume you are in US.?A1 isn’t very nice at all, Brits, prefer HP Sauce, some US markets sell it in the Brit section, if not it’s available on Amazon.😃
