Cooking the most delicious and easy basmati rice! Hadramout Restaurant style 😋

Ingredients:
Three onions (400 grams), chopped
Vegetable oil
One tbsp garlic (15 grams)
Three tbsp tomato paste (45 grams)
Two tomatoes (300 grams)
Half a tsp each of cinnamon, cardamom, cloves, cumin, coriander, black pepper
Salt
One fourth of a cup of water
Long grain basmati rice (2 cups), washed and soaked for 30 minutes
Whole spices (cinnamon sticks, cardamom, cloves, bay leaves, cumin seeds, coriander seeds, black pepper)
Saffron or saffron color (soaked)
Fresh coriander (for garnish)
Instructions:
Fry chopped onions in vegetable oil until caramelized. Remove half from the pan.
Drain some oil from the pan and add garlic, tomato paste, tomatoes, spices, salt, and water. Stir continuously and cook over low heat for 10 minutes.
For the rice, boil water with a little bit of fried onions and one tbsp salt. Add the whole spices and let it boil for 10 minutes. Remove the whole spices and add the soaked basmati rice. Cook for 10 more minutes.
Strain the water from the rice and layer the rice and the tomato sauce in the same pan or pot. Drizzle saffron on top and add the remaining fried onions.
Cook over low heat for 25 minutes.
Garnish with fresh coriander and serve.
المكونات:
ثلاث بصل (400 جرام) مفروم
زيت نباتي
ملعقة كبيرة ثوم (15 جرام).
ثلاث ملاعق كبيرة معجون طماطم (45 جرام)
حبتان من الطماطم (300 جرام).
نصف ملعقة صغيرة كل من القرفة والهيل والقرنفل والكمون والكزبرة والفلفل الأسود
ملح
ربع كوب ماء
أرز بسمتي طويل الحبة (2 كوب) ، مغسول ومنقوع لمدة 30 دقيقة
بهارات كاملة (أعواد قرفة ، هيل ، قرنفل ، أوراق الغار ، بذور الكمون ، بذور الكزبرة ، فلفل أسود)
لون الزعفران أو الزعفران (منقوع)
كزبرة طازجة (للتزيين)
التعليمات:
يقلى البصل المفروم في الزيت النباتي حتى يتكرمل. أخرج النصف من المقلاة.
صفي بعض الزيت من المقلاة وأضيفي الثوم ومعجون الطماطم والطماطم والتوابل والملح والماء. يقلب باستمرار ويطهى على نار خفيفة لمدة 10 دقائق.
لتحضير الأرز ، يُغلى الماء مع قليل من البصل المقلي وملعقة كبيرة ملح. نضيف البهارات الكاملة ونتركها تغلي لمدة 10 دقائق. تُرفع البهارات الكاملة ويُضاف الأرز البسمتي المنقوع. يطبخ لمدة 10 دقائق أخرى.
صفي الماء من الأرز وضعي الأرز وصلصة الطماطم في نفس القدر . نسكب الزعفران على الوجه ويضاف البصل المقلي المتبقي.
يُطهى على نار خفيفة لمدة 25 دقيقة.
يُزين بالكزبرة الطازجة ويُقدّم
