So we love meat! But it's expensive, and it's not as plentiful lately. So with that in mind, I've made a video for all of us meat lovers trying to use a little less meat. Recipes are all down below.

BLT Pizza:
Crust or flat bread of your choice
Bacon crumbles, shredded cheese, shredded lettuce, diced tomato, mayo
Spread tomato, bacon and cheese on crust. Bake until finished and cheese is melted. Remove from oven, spread with mayo, and press shredded lettuce on top. Enjoy!
Chicken Pot Pie:
2 quarts chicken broth
1 cup shredded carrots
1/2 cup onion
1/2 celery
4 cups potatoes
2 cups cooked, shredded chicken
tsp. garlic powder
1 tsp. parsley
1/2 tsp. salt
1/4 tsp. pepper
a sprig or two of saffron
Pat of butter, or drizzle of olive oil
Dough ingredients:
1 egg
1/2 egg shell of water
3/4 cup flour (ish)
pinch of salt
Shred carrots. Dice celery, potatoes, onion. Melt a pat of butter in a large saucepan. Saute celery onions, and carrots with garlic, parsley, salt, and pepper. Stir until softened and fragrant. Add chicken broth, chicken, saffron, and potatoes and simmer on medium low. While potatoes are softening make dough. Crack an egg into a bowl. Take half an egg shell, fill with water and add to bowl. Add a pinch of salt. Have 3/4 c. flour available. Add flour slowly until you create a smooth noodle dough. You may need more or less flour. Roll out thinly. Dough should be smooth, but not sticky. Cut into one inch squares. When potatoes are soft, drop pot pie noodles into soup. Be careful to not drop them all on top of each other. Cook for a few more minutes until doodles are soft. Enjoy!
Tangy Chicken Marinade:
3/4 c. vegetable oil
1/4 c. butter, melted
1/4 c. lemon juice
1 tbsp. mustard
2 tbsp. brown sugar
1 tbsp. salt
2 tsp. onion powder
1/2 tsp. Worcestershire sauce
1/4 c. ketchup
Combine all ingredients. Mix well. Pour over chicken. Marinate 2-3 hours or overnight.
Best Ever Stromboli
1 c. warm water
1 tbsp. yeast
2 tsp sugar
3 c. flour
1 tsp. salt
1 tsp. garlic powder
1 tbsp. oil
Place yeast and sugar in warm water. Stir to incorporate. Let set for 10 minutes. Meanwhile, toss flour, salt, and garlic powder together. After 10 minutes add the warm water mixture and oil to the dry ingredients. Stir until dough comes together, then knead several times until dough is smooth. Roll out into one large rectangle or two smaller ones. (I did 2 smaller ones in this video.) Fill with meats and cheeses etc. Fold closed and place on a cookie sheet.
Bake at 375°F until dough is slightly brown. (If you want to freeze I recommend baking just until dough turns from doughy to crusty.) Cut and serve with pizza sauce or marinara. This is one of my all time favorite recipes!
Rice Recipe:
1 3/4 c. chicken or beef broth, or water
1 c. shredded carrots
3/4 c. rice, uncooked
1 tbsp. parsley
1 tbsp minced onion (or 2 tbsp. diced onion)
2 tbsp. butter
1/2 tsp. season salt
1/2 tsp. garlic salt
Mix everything together. Bake, covered at 375° for 45-60 minutes, or until rice is tender. Take out of oven and fluff with fork and serve.

Steak and Veggie Stir Fry:
oil
1 lb. steak cubes
1 bag frozen stir fry veggies (if time, use fresh)
2 tbsp. sugar
3 tbsp. soy sauce
1 tsp. onion powder
1/4 tsp black pepper
1 tbsp. toasted sesame seeds.
Drizzle a little oil in the pan. Heat pan to medium heat. Drop meat into hot pan to sear outside edges a little. Drizzle with the sugar, soy sauce, onion powder, and pepper. Sprinkle with sesame seeds. Then turn heat down and cook until cubes are heated through and moisture has cooked off. Steak meat should be soft.
Remove meat from pan. Add veggies and another drizzle of soy sauce. Cook until tender. Return meat to pan and saute just a bit more. Plate it up with some rice and enjoy!

    I am particularly fascinated by the fact you leave the baby by himself at the end of the table and you let him eat by himself. I am so used to seeing moms fawn all over the baby, spoon feeding them, etc., but you leaving him alone like that caught me off guard, and then made me smile. What a great way to teach autonomy

    Sally Blatchford lol. Im the same. I think when you fuss over them it makes them more babyish. A friend of mine at playgroup was shocked i left my toddler at the kids table at 1yr old to eat alone. I said he is fine, if he cries i can go to him. He had a great time eating with the other kids

    Just in case anybody comes back looking for reviews or anything, the Stromboli recipe has become a favorite family recipe and it’s definitely a favorite for friends we have made it for. We take more of a pizza twist on it, where we fill it with sausage, pepperoni, peppers and onions, and then we use shredded Italian cheese for the inside. And we dip it in marinara sauce. It’s delicious!

    Thanks for sharing your recipes and tips. Interesting enough, I have a chicken pot pie with a pourable crust in the oven right now! I'll have to try the soup version next time. My favorite way of doing chicken broth is using the kind you scoop out of a jar, a teaspoon to a cup of water. Such a handy thing to have on hand!

    For a couple of years now I've been adding dishes with legumes especially lentils to my diet as a substitute for meat. They are very hearty and filling and cheap. Chili, stews, soups and casseroles are all ways to use them.

    Spring is just arriving in Northern Ontario where we live, we've just had a handful of sunny days so far. While we are isolating at home my teenagers have really learned to play Euchre and so we have been having a nightly round of that after supper every day. My husband and I were losing but now are winning 12-9! lol I enjoy your videos, it's nice to get some inspiration from how others cook with similar ingredients! Thanks Megan! :)

    Thank you for the inspiration....it gets boring sticking to the same old meals over and over again! It is still challenging to find meat and cheese and even rice here in Canada at this scary time. These ideas will definitely help me stretch what we have in the freezer and pantry.

    It's amazing how much effort you put into your videos. I don't seem to have as much time or energy to do the things you do in a day. You're such an inspiration. After supper I normally will take my dog for a bike ride and take my plants from inside my greenhouse to inside my home for the night. I watch youtube to relax and play games on my phone. :)

    I love watching you and your family when you do cooking I love your kids they're so beautiful I wish I had a little kids your age are kids age they're so adorable but mine's 35 so kids grow up so quick that don't stay little forever I just love everything about you and your family you're amazing and after I do dishes after supper is usually time to go to bed cuz my husband don't get off of work till about eight 9 at night so that's pretty much all I do I just want to say thank you for everything that you have done on your channel it's been amazing has been an awesome and God bless

    I really enjoyed cooking with you. After supper I go to screen in porch and sit in the swing and listen to birds and other evening sounds. Usually with a cup of coffee or tea.

    Thank you for all the recipe ideas! Saffron is also very popular in Spain. My mother’s family are from Spain so we grew up eating saffron as well. Admittedly, in a much different way. Your soup reminds me of a version of southern chicken & dumplings. If the broth were thicker, they’d be basically the same meals.

    The whole reason my husband and I started out as vegetarians is because meat is pretty expensive in our country. We preferred to cook less with meat but better quality stuff for our children (who still eat meat) and eat vegetarian ourselves. We have so many delicious meals that don't involve meat and you never miss it in those meals!

    Love this recipe! Sometimes I mix it up and use Ranch w/Bacon dressing instead of Mayo. Keep em coming girl!

    As always thank you for the recipes! Your recipes are always so good ❤️ Italian dressing makes an amazing marinade too by the way... especially on fish believe it or not... I make foil packets with white fish and potatoes with Italian dressing... bake in the oven or on the bbq

    I’m also not a big fan of celery chunks so i dice it super small like that because nothing tastes right without it! especially chili! Love the recipes you shared!

    Evonnie is adorable. I so much appreciate you showing your meal prayer time. When we visited Hershey years ago we found a great tea room Cafe. The salad dressing was wonderful and the waitress told us that it was poppy seed dressing mixed with a little raspberry vinaigrette. I would make it up in a Mason jar.. so delicious. I like to cook Adame beans and add them to my salad too.. keep them cooked and cold in the fridge.. Thanks for your recipes..I want to try the soup.

    Yummy! Now I have some fun new recipes to try. Looks like I’ll be adding the BLT pizza to our Saturday night pizza rotation. We usually eat supper after dark in the summer to take advantage of every minute of daylight, so after supper we get the kids off to bed and tidy up.

    I was so glad to see your chicken pot pie recipe. My husband is originally from Pennsylvania. I’m born and raised Texas. Our pot pie is an actual pie with the crust, chicken, and vegetables. We call your pot pie more of a chicken and dumpling dish. The first time I ever made chicken and dumplings, my husband was very confused when I served him chicken pot pie.
