STUFFED SOFT PRETZELS:
Soft pretzel dough:
1 ½ c. warm water
1 tbsp. yeast
1/3 c. brown sugar
1 tsp. salt
2 c. all purpose flour
2 c. bread flour (optional, can be replace with all-purpose flour)
pretzel salt
for baking soda bath:
1 tbsp. baking soda
1 ½ c. hot water
1 c. melted butter
You will also need:
12 slices ham
12 slices cheddar cheese
Dissolve yeast in warm water. Let it set for 5 minutes. Add brown sugar and salt. Stir to dissolve. Pour into a large bowl with flour and knead dough until smooth. Cover and let rise until double. Roughly half an hour. Roll ham and cheese together into logs. Divide dough into 12 portions and wrap around ham and cheese. Dip in baking soda/water mixture. Place on pan and sprinkle with pretzel salt. Bake at 500° for 5-7 minutes until nicely browned. Dip in mustard or other sauce of choice.
Spicy Tomato Bisque:
1 onion chopped ( I skip this and just sprinkle minced onion in)
2 T. butter or olive oil
2 (14 oz. cans) diced tomatoes, undrained
2 (10 oz cans) tomato soup, undiluted
1 1/2 cup milk
1/2 tsp. basil, dried
1/2 tsp. paprika
1/4 tsp. garlic powder
4 oz. pepper jack cheese
Saute onions in butter
Simmer everything in pot. Add cheese at the end. Add a dollop of sour cream and pesto when serving.
When making this in a crock pot just stir everything together and heat thoroughly. (2 hours on high, 4 hours on low) Add cheese near the end.
Turkey Pesto Panini
Take 2 slices of bread. Smear one with mayo and one with basil pesto. Add turkey, sliced bacon, 2 cheese slices, tomato, and fresh spinach leaves. Spray panini press and place sandwiches on it. Grill just until toasty and heated through.
Sausage Sheet Pan Meal:
Italian sausage or brats cut in slices
Diced sweet potato with skins on
Broccoli
(Feel free to use whatever veggies, potatoes, or meat you want. But my favorite is for sure sausage with these ingredients!)
Drizzle with olive oil.
Sprinkle with:
salt, pepper, rosemary, thyme, season salt, brown sugar
Toss to coat.
Bake at 375° for about half an hour (depending how small you cut everything.) Stir every 10 minutes or so.
Squeeze some lemon juice over the veggies. Enjoy!

The pan in the end gave me flashbacks to the horrible job of cleaning our one at home. We now use tin foil that has greaseproof paper on 1 side. This won't stick to the pan and you don't get any oil or mess underneath. Top layer is still foil so it will reflect the heat. It is a game changer!! Simply lift off, dump & replace... no cleaning required. 😊🇮🇪
I am home with two teens and a preteen homeschooling and and we were homeschoolers pre pandemic. There are a lot of days that my children eat while I read a read-aloud or something related to school to them to help save some time and keep us moving. I work part-time so there are days that I am out of the house for lunches and even or dinners. But I'm blessed to live in a 4 generation home so my father, daughter-in-law and I all take turns making dinner so if I'm not going to be home for dinner either use the Crock-Pot or one of them Cooks. Which I know is more than you asked LOL
I have a one year old and she is a great eater for the most part. I struggle to come up with variety that she can eat on her own. She loves stuff like Mac N cheese or cheesy potatoes. I'm so happy because I came up with feeding her cauliflower and cheese instead and she loves it! It looks about the same, is easy for her to self feed and I feel a little better about the nutritional value!

I used to do the muffin tins when my son was a toddler... He just turned 13, and loves it when I send what we call a "snacky lunch" to school. some combination of cheese, lunch meat, crackers, pita chips, home made ranch, hummus, veggies, hard boiled eggs, fruit, etc. He usually gets left overs in his lunch box, so this is a fun treat when we don't have left overs.

I loved this video. My family comes and goes at odd hours of the day and evening and having something made that they can grab and heat is extremely helpful and cuts down on the eating fast food or cereal for a meal. Thank you for sharing family and faith based values. I love them both!!!

I homeschool my 7 kids and most days we have leftovers or pb&j and fruit for lunch, hubby takes leftovers to work every day. He is an exception at his workplace ( railroad) all the other guys buy junk out of machines or get fast food

I’m a grandma and miss those days with my kids. If I could do over I would but, I can’t so I cherish my grandkids I watched two of them until they went to school. Cherish each day with your children they are a gift from god. I spent time with my kids and cherish those days. I just would have done even more with them. With this virus now I don’t get to see them much. I have one who lives in Kansas with her family and my son in Vegas with his family. My youngest live near bye.

Yes, it’s a real thing raisin babies, and keeping them fed, I almost thought with their pickiness, that they would starve 😳, THEY WILL NOT! There were dayz, when I never seemed to leave that kitchen, I would often do multiple meals....MY BIG MISTAKES, plz learn from me, keep it short, simple, pancakes can be for lunch or dinner 🥞, full of fiber, protein and fruit 🍎! Thank you, u always have great ideas, and often get my day turned around!😊

Megan, those pretzels look delicious and I want to try them. I also love your charcuterie lunch, picnic style! Have you tried to chop onions up really fine and put them into a dish? When my children were younger, I would blend the onion to put in a recipe, until they got older and started to like them more.

Yeah. For the most part I'm very fortunate! Evonnie wasn't in love with the tomato soup though.
we do all... I have 2 at school, one I homeschool, and a husband working from home...and I work part time...and they are teen boys... they would LOVE those pretzels! totally going to try them!!
I am working from home at the moment and seriously running out of lunch ideas so thank you! I am vegetarian but can adapt a lot of these. I used to eat out 2/3 times a week when I was in the office and brought leftovers the other days, so this is a lot cheaper but I also get bored super quickly!

Thank you for these meal ideas! I’ve been needing some cooking inspo. We did haves variation of the sheet pan meal for dinner last night. Ours was 3 colored mini potatoes, a couple of peppers, a bunch of elephant garlic cloves, & kielbasa. Not a scrap was left. I think I’ll need to make two trays next time if I want lunch leftovers!
Megan...great video! I love what a great mom you are! When my kids were little, I used to cut raw broccoli in bite size pieces and toss with Italian dressing as a side dish or salad. Prepared 20 to 30 minutes ahead of time seemed best. A great way to get broccoli into littles! My kids are grown now, and still love it and make it for their own kids!

I pack lunches for my husband who goes to work, and for myself and my two children who attend school where I teach. My family is not fond of sandwiches, so I often cook enough for dinner to pack extra in containers for the lunches the following day. The stuffed pretzels sound like a fantastic idea.

I just started a remote job so this is a great video for me. My husband also works as home as well. I was telling him about the pretzels and he was sold. :) Also love the picnic with the kids. My mom did that with my sister and I when we were little and still a treasured memory.

Hi Megan! Been awhile since I’ve seen one of your videos. Loved this and loved watching your kiddies! Godly mothers of preschoolers do need lots of encouragement. I loved MOPS (Mothers of Preschoolers) where we had a speaker, some breakfast with other Jesus following mommies. Little grandmas and grandpas watched the kids where all the mommies got a much needed recharge and fellowship. I feel like I am in my own kitchen watching you cook! I have the same panini press we use all the time, and the same Aldi items in my fridge and pantry. Know that these preschool years pass by so quickly! Now I have a senior in high school so enjoy these tender years! You are doing such an important job!
I look at lunch time as the perfect break in the day to take a breather, refresh, nourish, & gear up for the afternoon. Lunches have been such a struggle since we started school. I find it a challenge to teach and cook lunch 🙈 thanks for the new inspiration 🙂
Having make ahead options is great. Definitely takes some time to make some of these meals but if you can choose when you do the prep, it makes it all possible. Love the cupcake liner idea. It looks interesting and lets them choose. Love the indoor picnic. Love that you are so comfortable with spices and use so many different ones. All your cooking videos are appreciated. My kids are grown and my husband and I have dinner together but often not breakfast or lunch because we are on different schedules or just want to eat when we are actually hungry now that the kids are raised. It works for us! Precovid, we enjoyed watching Sunday golf or football and appetizers were very often a part of that. We actually are finding usually 2 meals a day and a snack is enough now.

I love your cooking videos! It gives me so many new ideas. We always just have leftover dinner for lunch the next day and i typically cook every night. We get tired of eating the same food so quick so i try not to cook too much. Ive noticed if i make too much i end up tossing food. It was something i had to learn when i got married. Also i love that you dont cook with onion! Im allergic to onion however i can use onion powder. I just love that i can follow your recipes and i sont have to sit there and figure out what im going to replace the onion with.

Hi Megan! There are five of us, me and my partner who work full time and need packed lunches plus our combined three children, 12,11&10 who also need packed lunches for school! Not married yet but been engaged for seven years! Together for eight :) Just bought all new lunch bags, freeze packs and food flasks for the new year :) God bless beautiful sister!
