Steven Kaplan was my professor and mentor at Cornell in the mid-70s and launched me into my career. As a disciple of the Annales school of history his scholarship ranges far beyond bread, although bread, as a core component of the French and European diet even today, is central to all his work. And yes, his lectures and seminars are every bit as entertaining as this Conan segment, filled with metaphor, puns, and ribald imagery. He is brilliant if verbose.

Same. There's often some "third guest" types that come out just to tail end the show when they don't have a musical guest and sometimes I zone out because they're not all that interesting but this guy really did a good job playing around with Conan.

What? Not even close. This was sexual for no reason which was funny, Jordan isn't sexual, ever. Clearly the professor is joking around and Jordans character is trying to be overly serious and analytic. Actually I don't see any resemblance to Schlansky.

8:43 Conan forgets the professor's name and looks up in despair. He then starts talking about the book instead. 8:50 Conan sees the name on the book. He feels relieved and pretends as if nothing happened. Pretty sure the professor realized it from the beginning and was trying to see how Conan gets out of this one. Was not disappointed.

If this isn’t one of the most impressive segments I’ve ever seen. The natural comedic talent of the bread guy, Conan’s ability to feed off of the bread guys jokes and energy, the way they compliment each other, and the fact this comes off as unscripted and completely genuine comedy. I wasn’t expecting this

he was there to promote his book. they promote books a lot, in addition to showbiz's movies, tv shows, comedian tours, stand ups, theatres, sports games, singer concerts
There are A-list actors who don't have as interesting and engaging interviews.
I love how Conan finishes the interview in the last five second. A sincere thank you and a handshake. Aknowledging that this was a bit and the man deserves credit for his book

I love this bread guy. At first I was like: 'poor old man, I wonder if they warn their guest of how...well strange conans interviews can be' But then he goes all in and plays that weird bread guy so well. Very entertaining interview great exchange.
A good example of what makes Conan so magical. You can see it in his eyes early on that he knows this is going to be a good interview.

tbh we don't do all the fuss around and we certainly don't spit at the end, but ofc most people in france can recognize a good baguette from a bad one immediately ; i cringed as soon as i saw some of the baguettes, and felt relief when he threw them away (not a joke)

Me thinks this fella teaches at the "Jordan Schlansky" Center for kids who can't read good. Man the wordsmithing from this man is on point.
He wrecks wonderbread at 7:16 like he has been waiting to do it his whole life.

this is one of the few times a guest took the show from Conan. Conan just had the follow through the craziness. It was amazing.

Big Daddy, I took a class with Steve Kaplan in 1982 and never forgot it: the first lecture was 45 minutes on the social significance of bread in French society and Catholicism before the French Revolution, and at the end he talked about Marie Antoinette’s “let them eat cake,” and why it would have been a big deal in 1789. Yes, he would throw in the sexual comments (not quite like here-he’s having fun), but then he would move to the insight of how a little thing like bread told you about a society and world.

This is one of the great interviews of Late Night. Everything about it was comedic gold. Possibly intentionally, but if so, they disguised their writing pretty gracefully, making it seem like the lines were naturally-delivered. But I think it was mostly unintentional, and Conan just happened to have a funny guest who knew _exactly_ what he was doing.
"If this segment airs tonight, I'm gonna be very surprised."

That theology comment caught Conan off guard
The finale was just awesome, that guy is so hilarious and has a good chemistry with conan
This man is naturally funny on the same level as Conan himself. I love when Conan is genuinely shocked by the quality of the “and it has no theology” line.
Conan with a witty guest is the best.
The writers couldn't produce a better sketch....Jesus. when he opened it and stuck his face in to sniff.....i died
As a French it was hard finding good bread that wasn't expensive when I was living abroad in America. Making bread is really an art, it take skills. You can really taste the difference like a good wine. Spitting the bread or getting his head in the bread was quite weird and funny tho.
Never would have thought it by the description....but this is one of the very best guests ever had.
