Last weekend brisket trim ‪@GulfCoastSmoke‬ was my camera man for the evening. In the video i go over my process of separating the point and the flat for competition bbq. Big shout out to Midland Meat, as well were lucky enough to finish 1st place out of 91 teams!

    Always great to be at events with you. I was there in Angleton too. Unfortunately I didn't get a call, best I got was 11th in chicken which I was happy with. Always enjoy learning from you and Alonzo.

    I've watched a lot of brisket trimming videos and I've never seen anyone use a brisket slicer to trim. It's genius. Looks like you have much more control as opposed to a boning knife or a breaker. great video.

    Bill, that was a great video! I've never used a caddie, how does that work for seasoning the sides when you have to "push" it into the caddie? Does that not rub it off?
