Ingredients
250g unsalted butter
90g icing sugar
5g coffee powder
5g warm water
5g coffee emulco
300g all purpose flour
1 tsp baking powder
120g crushed almond strips
120g chocolate chips

No need to freeze it. If cookies turn out flat, you can chill in fridge (not freeze) for 30mins then only shape and bake

Coffee emulco is coffee paste. You can use extract if you can’t get emulco

Hi chef, if now market don't have all purpose flour... any choice of flour to choose to achieve the same texture?

All purpose flour is meant for cookies. If u use any other type, the texture will not be exactly same
Hi why can’t we roll the cookie dough into a ball and if its ok to bake the cookie dough on parchment paper, will it make a difference as to bake directly on pan or on parchment paper? sorry im very new to baking😅

You can roll into a ball but don’t compress it, it will affect the texture. Also I love having the cookies with the natural uneven surface texture that’s why I don’t roll it in a ball. If your tray is non stick, you can omit the baking paper
So yummy..Will the texture be affected if i use almond nibs instead of almond strips

Almond strips give more crunchy mouth feel. Not a big problem to swap to almond nibs

Should be alright. Try with small amount first
Is there a substitute for coffee emulco? Can I just mix more instant coffee?

You can omit it and use more coffee powder. But just that emulco makes the coffee aroma more intense than coffee powder

2-3 weeks no problem for me in air tight container. Actually this recipe without egg, you can keep even longer as long as it does turn soggy. Keep in air tight container

I didn’t count 😅. But you can total up the recipe weight and divided with 8g each to know the number of cookies
