Coconut Milk Tapioca Pudding
My recipe for coconut milk tapioca pudding is the perfect base to build fruity toppings on to. Vegan and gluten free, I show you how to make this delicious and simple dessert.
Ingredients:
5 Cups water
1/2 Tapioca Pearls
1 can organic coconut milk
Additional 1/2 cup of water
1/4 teaspoon salt
1/2 cup sugar
Suggested Toppings: diced mango; raspberries, passionfruit

I can now use the small tapioca I have in my pantry, just need to get the coconut milk. Grandkids love this with Sri Lankan “Juggery”, from sugar cane with sliced bananas and papaya. Their Sri Lankan granny would make it for them when we visited many times from New Zealand. I am a “Kiwi”, and have acquired a great fondness for these desserts! ❤ Thanks for this recipe, my cooking was never as good, but you have showed a great way by having the water boiling first! I’ll surprise the gkids here in Auckland, New Zealand, this weekend ❤🦋

Thanks for such a simple explanation! I want to make a similar dessert but more soupy, sort of like before you cooled it down. Should I just add the cooked pearls to the coconut milk mixture after it has cooled down? And how would I keep the pearls from clumping? Thanks in advance :D

I would do the same thing as in the video. Cook the pearls longer until they are completely cooked. Rinse them in cold water as in the video. Rinsing will help the starches come off and it won't stick together as much. Have the milk mixture ready and then add the pearls. You will probably need some more liquid.
