Banana Coconut Tapioca Pudding - or Coconut Sago Pudding, a creamy, dreamy pudding made on coconut milk, with fresh bananas. EAsy to make, served hot or cold, you can change the flavour of this pudding by adding different fruits such as mango or passionfruit.

1/3 cup small tapioca (sago) pearls
1 cup almond milk (or other non dairy milk)
1 can coconut milk
1/3 cup maple syrup (or coconut sugar)
1 tsp vanilla

Can I use the minute tapioca?

Thanks for the question. I am not familiar with the minute tapioca, but i'm assuming it's called that because it's pre-cooked. In which case I'd say no. The recipe relies on the starch from the grains releasing to thicken the milk and make it custardy. If the tapioca has been pre-cooked then those starches are likely not to be there and you'll end up with a runny pudding.
