PROBABLY THE BEST BANANA PUDDING IN THE WORLD!
Now, let's talk about comfort food, shall we...But not any comfort food, a dessert that happens to be superb as well as easy and gorgeous looking. We are talking about banana pudding, my lovelies, my take on banana pudding which is so good, you're going to go back for seconds and, THIRDS!
INGREDIENTS FOR THE BANANA PUDDING:
1 liter of coconut milk
2 teaspoons vanilla extract, divided
4 sliced bananas
1/4 cup arrowroot powder or tapioca flour or cornstarch
1/3 cup agave or maple syrup
a pinch of turmeric
1/5 teaspoon of salt
1 slice of lemon or lime peel, optional
INGREDIENTS FOR THE COCONUT TOPPING:
toasted coconut flakes
Lime or lemon zests
2 to 3 sliced bananas
1 can of full-fat coconut milk
1 teaspoon of xanthan gum (see note if using a stand mixer)
1 to 2 tablespoons of confectionary sugar
METHOD:
Add the coconut milk to a pot, heat it in medium flame until it simmers. Do not boil the milk.
Add the sliced bananas, the vanilla extract, and the lemon peel; mix gently to coat the bananas in the milk
Cover the pot and let it rest at room temperature for about 4 hours, if you want a more fragrant and tasteful pudding, put it in the fridge and let it rest overnight.
Remove the milk from the fridge, remove the bananas (they won't be needed for this recipe anymore but you can use them for smoothies or baked goods)
Add the cornstarch, the agave or maple syrup, the turmeric, the salt, and vanilla, and whisk until very well incorporated and lump-free
Turn the heat to medium-low and stir until the pudding thickens.
Turn off the heat and add the remainder of the vanilla extract, whisk it then pass the pudding to a fine mesh sieve to get rid of any possible lumps.
Cover the pudding with cling film pressing it gently on the top of the pudding so it doesn’t form a skin, let it cool until room temperature then put it in the fridge for about 3 hours or overnight.
Divide the pudding into individual glasses or onto a small dish, garnish it with coconut cream, fresh bananas, coconut flakes, and lemon or lime zest.
FOR THE COCONUT WHIPPED CREAM:
Add the coconut milk to a blender along with the confectionary sugar and the xanthan gum and blend it for a few seconds until the cream thickens to your taste.
NOTE: If you own a stand mixer, you can use it then skip the xanthan gum, just blend the solid tart of full-fat canned coconut milk until it achieves a cloud-like consistency and almost doubles in size.

My grandmother was an amazing cook from the southern part of the USA, and I grew up with that style of banana pudding you were referring to. Loved it as a kid. This vegan version looks amazing also, and I just know that my grandmother would have loved it with that lime zest!♡ Hope you and the kitties are doing well. You can also use Banana extract along with your vanilla extract
Made this. But forgot the lemon zest. Bought some vanilla wafer cookies and layer a dish for my lunch the night before. Mmmmmm. What a treat. Banana pudding this way was one of my favorite desserts and something I missed since giving up milk.

Mmmm. I'm envisioning making this with those crisp dried bananas chips that you can get in the stores to replace the vanilla wafers. Hopefully I can have something that's a little like the ridiculous southern banana pudding I'm used to but with Jana's healthy spin on it. Thank you Chef Jana!

I mashed then beat the bananas smooth and added them back into the pudding mix then followed all the rest of the instructions….. DELICIOUS! I tried it like you did it first but I just felt it tasted like vanilla pudding….Definitely not enough banana flavor for us…. Great texture and SO EASY! I just love your recipes! Try Millet pudding as a “Base”. Make it thicker than normal So when you mix in the flavouring (such as bananas, blueberries, or raspberries as an example) it renders it into a normal pudding consistency.
I think bananas quality is really important. Will try it anyway: 3

Hmm. I'm not a dessert person either Jana. But! I am always in trouble with vegan cakes or desserts for family get togethers because a branch of the family has serious nut allergies. Like, epipen/rush to emergency kind of allergies. So many vegan recipes use nuts. Sigh. I don't have a Kitchenaid either and I have got by with a $30 set of beaters for a few decades. I never make cookies and rarely make cakes. Sourdough bread doesn't need a mixer, so I've never felt I needed one. But I can see this pudding in a rather lovely serving dish I have, piled with summer fruits and berries. There are now four (!!!!) covid grandbabies, so perfect for every age group. Thanks as always. The cats are not hanging out on the window sill lately - I miss them. But I know you can't make cats do what you want them to, they are in charge 😅 Thanks again for the recipe 👍🏻🥰 Does this help? Xanthan gum *Zan-th'n* & equal emphasis between syllables. You shorten the "than" and leave out the "a", so you can just glide from the "th" to the "n". I think it's the X which makes us get in a knot. If you think about X words in English many are pronounced as a zed (in English speaking countries, except the US, where they pronounce "zed" as "zee"). Not that you need to say it every day of the week 😉

The xanthan gum pronunciation, LOL! Your procedure for this is so innovative--as you know, what I have come to expect from you!--and I am sure this makes the tastiest nanner pudding ever. I have always found our American ones to be, well, bland: Vanilla pudding with an _aftertaste_ of banana. Thanks for improving the recipe, and ThanksForPosting : )

Hi Jana, Although I live in the US South where banana pudding is iconic, I don't like banana. However I love tapioca pudding. Would you veganize this for us? I'm especially looking for a non-coconut milk version. Many folks don't know this: coconut products are very stimulating to our thyroids, so those of us with hyperthyroidism are best to avoid coconut, in my experience esp the milk and oil. It makes me jittery. But it can help folks with low thyroid function.
Have ever try Kuzu starch instead of corn starch? I heard that kuzu starch is a super food and does the same as the corn starch.

I saw a video recently where a whipped cream was made from full fat dairy milk so I’m thinking the same could be done with a full fat oat milk. I don’t particularly care for coconut milk so I hope this works.
