Thank you for showing the traditional way to make them. The 7/8th was always the way to use the fabric you had most efficiently. The flippy corner idea seemed to come around about the time we quit sewing our own garments as much due to yardage price increases compared to ready-made. It created a way for more yardage to be purchased. I do try to use the little cut-off triangles, but so many folks don't, and they really add up in yardage. And time saver.
I need to get printer ink and I’ll be getting started, I love patriotic quilts but this one will be the first one I will make myself

Do you over size “all” sections of the flying geese or just the outside triangles? If you over size and cut down?
