FOR THOSE WATCHING THIS VIDEO: what you are seeing here is perfect pastry rolling. Rolling out form the center and not crushing the outer edge. Putting your pastry between two pieces of parchment/plastic wrap means you are not adding extra flour, which will make your pastry shell tough. Custard pies are an underrated and underappreciated joy. Specifically, I'm into the buttermilk ones, because I can't think of many good ways to use buttermilk, since what typically happens is you buy a jug for a recipe, use a quarter of a cup, and then the rest of it goes bad. So I just turn it into a pie.
