Stephanie Jaworski of Joyofbaking.com demonstrates how to make an Apple Custard Tart. This Apple Custard Tart looks so elegant with its artfully arranged apple slices enveloped in a rich and creamy custard. The tart has a Sweet Pastry Crust which has a crisp cookie-like taste and texture. Once the tart is completely baked, the finishing touch is to brown the tips of the apple slices under the oven's broiler. Then brush the slices of apples, the custard, and the edges of the pastry with apricot preserves which keeps the apples from drying out plus it makes the whole tart shine.

Stephanie, I grew up using your Moms book The Joy of Cooking! 70’s version paperback. My parents got it as a promotional gift from a local bank. I was able to learn to cook many things from that book. It was a godsend for me when I first moved out. I have watched many of your videos over time. I am glad I found this recipe. I have been wanting to make a tart like this for some time! Thank you and your family! Your lil terrier was so darling, mine always loves my cooking too!❤ Your recipes are ALWAYS trustworthy!

That cake Jurgen just baked for caramel week with the two different bavarois…I swooned! This tart reminds me of an apple custard pie baked by Germans from Russia in the American Dakotas, which they call “kuchen”- it has a soft, almost cakey crust, not a flakey pastry. This looks fabulous! Will try!

Actually this tart is proposed in every patisserie here in Switzerland (region lake Geneva) a classical well appreciated even to eat on the go. Interesting that average eggs in the US are 50 g, I just checked my eggs packages and the average is 58 g. And those from the farmers market are up to 65 g! Depending what pastry you are making it is worth weighing. Like for choux pastry. And great tip for the apple slices around the edge first. You are a great teacher and it’s a delight to see that you are not only baking with joy but also enjoy tasting and eating your creations.

This is a wonderful recipe, thank you! Martha Stewart crunched up the parchment paper and it is much easier to line the pan before the baking weights (beans) go in.
