Cincinnati-Style Chili - Food Wishes
Тәжірибелік нұсқаулар және стиль
It’s always treacherous attempting an iconic, regional specialty like Cincinnati-style chili, especially when you’ve never actually had the “real thing.” People are very protective of these types of dishes, and any variance from what they think the recipe should be is met with a visceral condemnation. On the other hand, the food Gods hate a coward, and so I made it anyway.

@@theart8039 Well, fortunately it's just simmered as opposed to boiled. To counteract the lack of browning, what the Skyline brand of Cincinnati chili does at their factory is they use a lot of yeast in their (secret) recipe which adds that umami flavor that is missed out on from putting the meat directly in water. The reason for the direct-to-water method is to get a fine consistency; no way around it. This is a recipe that attempts to reverse-engineer Skyline's recipe and procedure: kzread.info/dash/bejne/ZXqpptCpf5iXhcY.html

And indeed, the questionmark behind every sentence makes it a little bit awkard. He goes from pitch high to the exact same low tone every sentence, and his sentences are short as if he is reading an autocue. What matters is the food, though and I forgive it. But to be honest I rather don't be as distracted on his way of speaking so I can focus on what he says and how he makes it. But to each their own. It is always better than complete monotone.

As someone from Cincinnati and who lives right down the street from the best chili place in the city. I want to say this is awesome!!! I personally like my chili with a TON of chesse haha. But man this looks so good. Think I know what I want for dinner tonight.
The three way joke got me 😂😂
Love Skyline! Used to live in Cincinnati, the crunch of the raw onion on top wi-th the cheese is awesome!
Cincinnatian here: no one cares about twirling the fork. Eat however brings you the most enjoyment.

Have to try this 😋
Love the stuff. Thank you for making a childhood favorite.
Went to see the Reds play a few years ago when we were in town. Had the chance to get the usual hot dog and beer while there but someone had told us to look up the "Skyline Chili" vendor, so we did. Have to admit, it was one of the most unusual culinary experiences we have ever had, eating a bowl of this at a ball park, but trust me, it was well worth living through the strangeness. Meat chili piled atop a mountain of spaghetti noodles with grated cheddar cheese and hot sauce? To die for! We live in Upstate NY and we regularly make this dish at home as part of our regular rotation of meals. You MUST try this, either in Cincy or just wing it at home. Nots sure why it's called Skyline Chili, but whatever, it's delicious!
I "accidentally" made this once when I was drunk and just called it "Chili-Sgetti" 😋

Note to Australian fans: American chili powder is very different from Australian chili powder. Aussie stuff is straight up dried chili and VERY hot. Using 1/4 cup of Aussie chili powder will create a meat sauce so hot that maybe three people on the planet will be able to eat it. However, it is easy to mix an American style chili powder - just give it a google. Usually has paprika, onion powder, garlic powder, etc. and is much milder. Or you can buy "Mexican Chili Powder" (ironic) which will run you around $3 or so just for this recipe as you will use the whole jar.
Definitely making this! Looks great
We always had it with oyster crackers, too. That little bit of crunch, with the warm, spicy meat, the edge of the raw onion, creamy cheese and starchy noodles... Heaven on a plat, but it definitely takes a long time to eat, lol. As a kid I would get impatient and just want to shovel it all into my mouth.
Hell yeah! It's skyline time
I always forget that chili spaghetti isn’t normal everywhere 😂 I grew up on this and it’s still a favorite🤤

Me too. It wasn't till my adult yrs that I found out that Cincinnati natives are the only pple that put chili with spaghetti. And I was more shocked at how unheard of it was and that out of towners hate Skyline and Gold Star.
i made this for dinner tonight... my brother thought a mountain of cheese was good but a mountain of cheese crisps was even better! so he went about grating and baking cheese crisps to pile on top. thanks for the recipe, chef john!
So, turns out I accidentally made Cinci chili the other night although I also added ginger and cardamom! Exciting to know my cooking skills are improving and I thank Chef John for helping me take the fear out of experimenting. Great video.
Ive been craving this...made it a few times. Shout out to pleasant ridge chili! 5 way, double turkey and gravy cheese fries...ftw

I LOVE Cincinnati chilli! I like it with pasta, chilli, cheese and onions on it. No beans for me, please!! I haven't had any in years so now maybe I will look into making my own. Thank you for this recipe, Chef John!!!
My 11 year old has a chili cook off fundraiser this friday, we’re using your recipe. We lived in Dayton, OH from the time he was 4-9 years old so Skyline Chili was like his happy meal lol. Now we live in Georgia so we’re going to bring this to the South. Great video, very helpful! We also have a nice butcher shop to grab some grassfed beef.
an Icky Woods reference, nice!
Skyline Chile‼️delicious ‼️ I discovered it in a Florida drive thru.‼️

Appearently there have been so many elderly people retiring to Florida from Cinci that there was a demand for it. So you have a few down there.

i spiritually travel to cincinnati from time to time. guy fieri's drive ins, diners & dives had an episode with dogs and chili in chicago, and cincinnati spaghettified style chili with liberal amounts of cheddar on it occurred. this looks awesome.
A five-way is chili, spaghetti, cheese, onions and beans. And yes, yours was probably a little too thick at first 😉

Chef, I've been watching and enjoying you cook and also trying to do the same myself for a good while now. I have to say this has been then only upload / recipe I've looked at and thought "Nah! That just looks like something my dog sicked up last week". Now, I shan't be rushing to buy tickets to visit Cincinnati, but it sure wont stop me enjoying what you do. What happens in Cincinnati... Can stay in Cincinnati.
