    I've heard him use that phrase before, but this is the first time I've heard him posit the existence of comparative perfection. More perfect? Most perfect? Perhaps perfect, perfecter, perfectest? I think my sophomore English teach back in 1972 might have had a stroke at the notion, though Googling the words seems to support it.

    A "mandatory option" as they say in Detroit. It used to be if you bought certain options on your car you had to buy other options to go with it, like heavy duty brakes if you ordered the most powerful engine. On some supercars if you ordered the biggest engine you had a choice of automatic transmission or 4 speed manual transmission - both optional at extra cost.

    I'm Texan, born and raised..and I prefer Beans in my bowls of Red. When I make it at home, I add beans. Chile Con Carne is nice albeit having it's own time & place. Chili is a way of life! Flatulence Warning!!!

    My version of this is in the oven right now. I added a bag of frozen corn. I made enough for 3 pans. I will freeze the other two and these will end up being "fast meals" for one of weeks ahead. I like making double and triple batches of stuff so I can make "fast meals" during a week night when I know I'm going to get home late. I simply take out the bag of chili and defrost it, pour it in my 9 x 13 pan and put the cornbread on top. Wam bam! Dinner done in just over 30 minutes.

    This was DELICIOUS! My boyfriend loved it. I followed the recipe exactly and had no problem fitting it all in a 13x9 casserole dish. The only future change would be adding some diced jalapeno to the cornbread mixture. Also fun to prepare..

    Taking the opportunity to thank you for showing me how to use sour cream in chili and such. My husband didn't realize he would be a fan because he didn't grow up with it (ah, Canada!)     @@MsLilyPickles I'm confused here too, perhaps he's from a rural area in Canada? I've had plenty of chili and sour cream growing up in the greater Toronto area. You can find canned chili as well as sour cream in every single grocery store here. You can also find chili at fast food chains like Tim Hortons or Wendy's.

    Made this with some ground chicken I had lying around because I don't know why I bought ground chicken. Sauteed the onions in some bacon fat and olive oil to make up for it. Turned out amazing. The cornbread and cheddar mixture turned out perfect. One of the most delicious things I've had in a while. Thank you Chef John!

    If you really want to turbocharge the cornbread topping, toss in a can of creamed corn. I make chili casserole all the time and it works great.

    This recipe was excellent! My family was super pleased. It turned out amazing! Used the sharp cheddar cheese (2 cups Total). Needed the extra liquid during the simmering. Used 2 poblano peppers. Thank you so much!!! Xoxoxoc much love from New Jersey

    Though not a Texican, I am a life long member of the no beans cult, BUT I always throw in some niblets or frozen roasted corn kernels. Looks beautiful and adds some nice sweetness to the chili!
