OMG! My wife just made this... Tastes so good it makes me want to slap my grandma. This is so good it would have brought tears to a glass eye. So good it makes my tongue want to slap my brains out. This will make your liver quiver and your bladder splatter. So good it’ll make your tongue jump out and lick the eyebrows right off your head.

I love his humor and he's a great chef. It's just unfortunate that he's going to die young if this is his idea of a vegetable.
I'm going to be honest - I hit 'like' just after starting every Food Wishes video. I never wait to the end. I've never had to go back on my choices - "I regret nothing"

So good Chef John; at the point where you add the cream, instead pour in your favorite corn bread batter, bake til golden brown, that's the way I do it for "Mexican Corn Bread"
I will make this! Served on tortillas with Salsa Verde and cilantro. 😋🤯

I love Chef John's videos, especially how he narrates each video with a particular inflection that makes him sound like he is reading the longest run on sentence ever.
Just made this for Christmas morning 2020 and every.single.person LOVED it. Before the meal was finished there were already a few serving ideas for when I make this again: -Served atop rice; this suggestion came from my granddaughter, who exclaimed “This tastes like corn chowder and is now my most favorite dish!” -Served with corn chips, like a dip. -Funneled down your throat; this was unanimously agreed upon by everyone who loved ba’corn!
I love how you just ate it right out of the pan, keeping it real.
Its like an amazing, hearty, loaded corn chowder. Throw that over a heavy buttered baked potato

I don't understand how Chef John's videos can get any dislikes at all. It does not compute.
Your videos make me smile ear to ear whilst my mouth watereth.
Chef John.. i stumbled on to your videos in 2019, but over the last year, your videos became my daily moment of zen. Some days, i would need several moments of zen, so i would follow you down the rabbit hole of mouth-watering recipe videos. Your pleasant, calming food videos helped me forget about how bad things were this year.. even for just a couple minutes a day. My husband and I made it through. We were both vaccinated and to celebrate, i made 4 of your recipes, a pork loin, with asparagus, ba'corn, and a boston cream pie for dessert. Im happy to say that all 4 were homeruns.. a grand slam if you will.. but this ba'corn dish was unbelievably delicious. Thank you for getting me through 2020 and making me a better cook in the process.

The 2 best cheese combos for this dish would be provolone and swiss gruyere, my fave is the swiss gruyere, a little pricy , but well worth it, it is delicious.
Yumm. Serve with tortillas or tortilla chips. Add a shake of habanero sauce. I'm ready for dinner!

Chef John you have done it again. I'm a long time fan of your channel, having tried several dozen of your recipes over the years. I've recently gained a girlfriend in my life, who happens to have a gluten intolerance. I have a newfound love for dishes like this that are gluten free. Thank you for your years of service and your love of your craft. They help poor souls like myself find love in the arms of a gluten free gal who loves food.
As a child my mother would make fried corn....bacon....sliced tomatoes...fried potatoes with onions..cornbread. Best meal ever!!!!

I just bought a Victoria 12" cast iron pan because of Chef John. I scrolled through multiple screen shots of videos and then found this. My wife will taste this, tomorrow around 6pm, and say, "Chef John?" Thank you, Chef!
Chef John, this is an absolute winner. I have made it a half a dozen times and everyone who has it, loves it. It especially goes well with a nice ribeye steak! Thank you for putting out these recipes and the videos.

That amazing moment when a video shows up right when your starting dinner AND you have some chef John creme fraiche
My cast iron pan needed seasoning that I didn't have time to perform before I tried this - so I cooked this in a pan, then transferred it to a casserole dish and baked it. I added a *gasp* can of rotel and in my first version, I also added a *gasp* jar of salsa. Additionally, I added some diced ham (or sliced ham cut into small squares) which I added to the bacon grease before I added the corn. Lastly, I diced some tomatoes and put some on before the bake - and then more after I pulled it out from the bake. This has become my favorite Thanksgiving side - and the only thing I go back for seconds. Also, on my second try, I was running low on cream, so I filled in the remainder with half-n-half and some bacon ranch dressing. Thank you for teaching me this recipe! :)
Other than the bacon I'm also pretty much vegetarian.

I know, I cried when I saw that. In every single video where he's called to drain the bacon fat, I never have, and not once has it resulted in a dish being too runny or greasy.

I only keep pure bacon grease. After you've used it to cook something else it'll pick up the other flavors which will not necessarily be desirable for the next thing you cook. So I endorse his discarding the excess bacon fat in this case.

ok so I made this twice ...first time using a good quality dutch-oven and the results where.....I LOVE YOU CHEF JOHN!....then I made it again in a heavy cast iron skillet..with two decades of seasoning....the results where....this is now my go to side dish for a large holiday feast or just a really excellent one-pan meal....thank you so much
Incredible dish...savory, more than sweet. And I too ate this all by itself and myself.
Life is easier since I put all my Chef John recipes in a folder called 'Chef John.'

I think I'd like to try it that way. My Hispanic students got me to try mayo on roasted corn (along with chili powder and cayenne), and that turned out great.

I think it depends on the ratio of mayo to condensed milk. It would be very rich but not necessarily in a bad way. I think it would be worth a try!

The Mayo and sweetened condensed milk version is on point. I haven't tried it with heavy cream.

FANTASTIC flavor. Super simple - everyone loved it! The Jalapenos give this dish such a nice touch! As well as mixing two different cheese types.
I just made this and it is AMAZING! I, too, have a new favorite side dish! I'll be making this for all our get together's from now on!

looks at the thumbnail, that looks like something we have in korea hears the mayo and condensed milk, sounds crazy enough to be korean looks up the bun shop....yup, korean and i would have to say, i doubt they invented this. i've had this "corn salad" many times during the 15 years i've lived in korea

This dish puts me in mind of the Mexican 'vendedores' that sell corn on the cob on sticks. I first tasted these huge succulent and buttery cobs in Vegas. They were slathered in mayo spinkled with cotija cheese and tajin (a chili seasoning). Absolutely delicious! Thank you for sharing this recipe!

If you sub the corn for roasted hominy and the jalapeno for ancho and the cream for a pound of butter, this recipe is called a Brown Ranch Baker. A once powerful pig farm in Texas. It was a dish brought to annual reunions in a Miraflores Park.
