    as someone who grew up in missouri with a dad from ohio, i've had a lot of canned skyline in my life, and may i just say, it is sooo much better if you cook the chili on a stove for 5-10 minutes, bring to a boil and then let simmer until water content reduces into more of a sauce than a soup. the cooking marries the flavors really well. microwaving for a minute or so just does not compare.

    Great idea for a series. Born-and-raised NYer here, if you haven't already, you MUST try a NY-style pastrami sandwich. It'll change your life! Rye bread, pastrami, coleslaw, spicy brown mustard. Don't forget a dill pickle on the side!

    Never been to NY (unfortunately), but there's a place in Hollywood that makes a NY-style pastrami, and it really was life-changing.

    I’m a born and raised NYer but never EVER had pastrami. I grew up in Northern Manhattan so there’s not many places advertising it. Where would you recommend a first timer to go?

    @@alize0623 If you wanna make the trip to the Lower East Side, Katz Deli. Considered by many to be the originators of the sandwich. But any Manhattan deli should do. Surprised there's apparently nothing in Upper Manhattan.

    My family is from Cincinnati and when I travel to go see them we always have to stop by Skyline and White Castle. We don't have a Skyline here where I live so going to Skyline is a huge treat. It's okay, I'm not a huge fan, but it's a fun thing to do with the family and they get a kick out of me acting like I really like it so I'm happy to make them happy. I brought some skyline packets to make for my wife. She was highly offended that I severed that to her. She hated it but when we took her to Cincinnati she actually really enjoyed her 5-way. The stuff in the cans and packets don't hold a candle to the real deal. :-) it's cool to see you try it! I love watching your videos! Thanks for all of your hard work!

    I’m from Cleveland and it’s even a thing here, and absolutely delicious! There’s a Skyline around the corner from my house. 4-way onion is the way to go, with a cheese coney, and no twirling is correct. When you made your 4-way I could almost smell it and began to salivate. YAY CINCINNATI CHILI!!!

    Check out country club bakery in Fairmont Wv they are supposed to be the original makers of pepperoni rolls. I live about 5 mins away from them and there's nothing like a fresh one❤️ but super simple to make at home most of us just eat them plain but sometimes people add Oliverios peppers, sauce, mozzarella or american cheese😊

    I am so glad you did this! I am from just east of Cincinnati, my daddy's hometown. In the restaurants the chili/spaghetti is served on an oval dish, it is eaten by cutting through with your fork, no knife, each individual bite, working from one end of the plate to the other. Thank you Emmy! Glad you enjoyed it!

    My mother was raised in Cincinnati and always put spaghetti noodles in chili. The noodles absorbed the chili flavors as it simmered. I had no idea it was a regional thing. 🤗💚

    Some people use, cocoa powder but, Skyline actually uses a 8oz Hershey’s Chocolate Bar, I was told this yrs ago by a worker, who, I knew. Then, the recipe, I got calls for pumpkin pie spice but, I like the cinnamon better. Empress was really good, we had a family friend who owned a restaurant yrs ago, Empress sauce is really good, because, they put dried chili peppers in there sauce, yes, they take out the seeds so, the dried chili’s just gives the sauce extra flavor. There’s both chocolate and cinnamon both in the original recipe. However, Gold Star uses cocoa powder rather than, a actual chocolate bar.

    You got to do St. Louis next! Deep fried “toasted” ravioli! Gooey butter cake! Provel Cheese pizza with lots of oregano! Provel cheese anything! St. Paul Sandwich! (St. Paul sandwich would also be an appropeiate “hard times” recipe)! So many iconic foods!

    @@KGurley07 If you live near the city you can find St. Paul sandwiches. I lived out in Florissant and never saw them there but my great grandparents and grandparents lived in the city almost to downtown that is where I got mine. Its basically Shrimp egg foo young on white bread with onions and tomato or sometimes lettuce. Its pretty good. Never seen it anywhere else.

    There's actually a video provided by Skyline during orientation detailing how to do it haha... it said to cut like you would brownies are lasagna in rows across and down, and truthfully it works pretty well. It at least saves me the bib...

    It's the wrong kind of plate. Cincinnati chili is served on oblong plates. Many of us eat it with a fork only and of course no twirling. You start at one end of the plate. You cut it with your fork and scoop it up with your fork with a forward motion as if you are eating a bowl of soup. The correct amount of cheese is imperative for holding the perfect bite on the fork where nothing falls off until you get it in your mouth.

    I've worked at skyline before, and i know first hand that the canned stuff doesn't come close to the original. They don't sell the right materials to make it correctly, but here's a couple of tips to try and imitate it a little better. Over cook the spaghetti to hell, add a mixture of oil and a little tomato paste to grease up the pasta after its cooked, and use really poor quality FINELY shredded cheddar. (Btw no real humans eat at goldstar)

    I was raised in Kentucky and my major fam-tree came from Indiana, and I have fond memories of my Mother making this style of chili, in the winters. It stuck to your ribs and filled us up. It's a great comfort food. When we moved to Texas; you'd have thought she'd committed a mortal crime putting anything other than meat and chili fixins, in her chili. She dropped the spaghetti from her chili recipe after we moved. My brother swore it was just something she did to stretch the meal budget. I am glad to see it has some recipe roots that go deeper than just frugality.

    I’m so glad you loved it! It took me years to try it and another 5 to actually appreciate it after I moved to Cincinnati in 2000. Now I eat Gold Star chili cheese dip and skyline coneys and funnel cake fries regularly. I’m originally from Kansas... try some Indian tacos...that fry bread is DELISH

    East side Cincinnati here, I prefer Gold Star. You are absolutely correct to cut the noodles, but I honestly just use the side of the fork. If you still have some left over, layer some cream cheese under the sauce and cheese, and heat it up. Scoop it up with corn or tortilla chips.

    try this with some sauce from Tony Packo's in Toledo for both. I get dog's and brat's from either Kent County Foods in Grand Rapids Michigan, or Koegel's in Flint Michigan. Talk about snap!. cooking hint: put dog's in cold water, bring to boil then slow boil for six minute's. Even cheap Bar S will plump. "keep the faith people, and keep on keeping on"

    I was raised in Los Angeles and recently moved to the Cincinnati area. I had never heard nor cared about the Cincinnati chili phenomenon my husband, who is from the area kept insisting I go. So, finally, I did and clearly, he knows me. This stuff is AWESOME! Although I think Skyline has the best flavor profile I am all about the Gorito from Gold Star.

    @@delaneyk1847 I agree. Its delicious and something so unique. Never travelling west before and having green chili smothered on a burrito was mind blowing. My aunt took me to Walmart and they had frozen hatch chilis there. Cannot get them in Ohio.:(

    I was totally unaware pimento and cheese was a VA thing. My whole family was from Texas and I grew up eating that stuff. I just introduced a friend in Cali to pimentos and his mind was blown.

    @@sillypanda4658 YUP! It sounds very strange, but it is delicious! If youve ever had satay sauce its "sortof" in that flavor realm. The Red Fox Inn in Middleburg, VA has probably the best peanut soup Ive ever had. Its definitely a "VA thing" but if you ever get the opportunity to try it you should. Its delicious!

    WTF. I literally just made and ate coneys with Cincinnati canned chili sauce before I saw your thumbnail. Also I live in Ohio.     You don't twirl. You cut it with your fork. The cheese and chili make it hold together well, so you get a good chunk of both in each bite. Twirling it makes it all fall off.

    I live in West Virginia and we go to Cincinnati quite a bit. I love Cincinnati chili. I find most people either love it or hate. I have made it at home before. I think the unique taste come from the cinnamon , coco powder, and clove. I found a recipe for making it into a dip for tail gating. Nice video, can’t wait for another one in this series

    when I make chili.. there is always one night when it is served over spaghetti... and yes adding cheese and onions. I just called it Chili Mac... I love my chili just like the next person.. they love their own chili... LOL oh... I twirl my chili mac... wouldn't think of cutting it up!!

    Yours sounds pretty good too...🙂 I actually make my moms Cincinnati 3 way chili...and tht is with it served over thin spaghetti noodles and sometimes..very rare bc we always want the 3 way chili!..sometimes I make "regular" chili and I will make "my moms" chili mac with leftovers the next night which is elbow macaroni noodles, mixed with our chili, lots of cheddar cheese mixed IN IT and FRITOS put on top of it all(after u spread mixture in casserole dish!) Then u put the fritos and more cheddar on top the frito layer and throw it in the oven for a bit and omg its sooooo good lol. U can also mix some.fritos in the noodles chili and cheese mixture and put them on top too!

    It's a really easy recipe to make at home, too, since you boil it all together instead of browning the meat. Cooked it all the time for my southern husband when we lived in south carolina, and now he's hooked and it's his fave fast food place up here in Dayton/Cincinnati area.

    My family and I have never been to Cincinnati, but my grandmother started putting canned chili on spaghetti nearly fifty years ago, and it’s always been a comfort food for me. I’ve had a few friends come over for dinner, but most didn’t enjoy it much.

    Yay! I’m from Cincy and am so happy you made this video. I always liked gold star but only because they had crinkle fries, where skyline has skinny. One thin I didn’t see mentioned yet is both places hot dogs are little. They are like half the size of a normal dog. So cute to eat.

    I've been wanting you to try Cincinnati chili for years! I'm so glad you finally had a chance to taste it! I will say though, Skyline and Gold Star are far from our only chili parlors here in Cinci, though they are probably the most prevalent. The chili in the restaurant also takes way different from the packaged stuff. (Gold Star is better in the store, by far. Canned is okay, but you really have to try it in the restaurant someday.) That said, if I can scrape together enough kinds of chili, I may have to send them your way...for science.

    Oh, and also, we don't eat it with a knife. I don't think I've ever seen anyone actually cut their spaghetti with a knife. It cuts just fine with the side of your fork. And did no one mention oyster crackers? They're an important part of Cincinnati chili. It's the first thing you're served in chili parlors. You sprinkle them over the chili (or eat them with hot sauce on top. Ah Cincinnati and our strange food culture) and it adds a nice crunch like the onions.

    I love her sweet demeanor and original content. I love to cook so I watch plenty “omnivore” and vegan channels lol. I just customize to fit my needs. Sometimes I feel like everyone is basically doing the same thing but not Emmy. She definitely does her research to bring fresh, inspiring ideas.

    When I was in college, a chili restaurant opened near campus. They had four regional versions available every day, with your choice of spaghetti rice, or beans. Oh, and their cornbread was terrific. I miss them so much.

    As someone from Cincinnati, skyline is way better than gold star. Skyline is the more spiced one and gold star the more bland one when you have it fresh.

    Agreed but not all skylines around town are created equal. The one by me in Bridgetown is awful, but the one by my work in blue Ash is amazing.

    I grew up in Cincinnati, I'm so excited to see you feature Skyline!!! It's true, we eat all of our chili on top of spaghetti. I was so surprised to find out that everywhere else in the country you all eat chili in a bowl haha

    OMG! Had always been intrigued by Cincinnati chili! Your video inspired me to try making a pot of it. The spices were amazing -- cumin, cinnamon, allspice berries, cloves, cayenne pepper, chili powder, and dark chocolate! Took it a step further by substituting meatless ground meat and chopped brown mushroom for the 2lbs of ground beef (to be a bit healthier and for the veggie bf). It was AWESOME! Thanks for the inspiration.

    From my grandmother's hand-written cookbook (circa 1934): "Sauce for Spaghetti from Greta Esterhazy in Covington" - 1 pound lean beef ground or minced fine with a sharp knife; 2 tablespoons fat; 2 onions minced fine; 2 cloves garlic minced fine; 2 teaspoons cinnamon; 2 teaspoons fish sauce (I am guessing Worcestershire sauce); 10 leaves Italian herbs minced fine; add walnut ketchup (I am guessing A-1 sauce) for taste; salt well. Covington, Kentucky is just across the river from Cincinnati.
