Chili recipe challenge: We tried a blind taste test of Skyline, Gold Star, and more Cincinnati chili

In celebration of 100 years of Cincinnati-style chili, we're going all-out. Like, six-way with onions, beans and garlic all-out. Maybe even some mustard and extra cheese.
If you're wondering what exactly happened 100 years ago, it was Oct. 24, 1922, when Empress Chili first opened its doors. And, boy howdy, look how far and wide our food staple has reached since then. It basically defines Cincinnati's place in the world. And we're OK with that.
The Enquirer staff tried a blind taste test of local chili and tries to guess which one is which. Here's how we did.

I used to get it now and then. I went to one on the West Side in Delhi area. Also went to one in New Richmond. There is still one left in Alexandria across the bridge. The chili was a bit thicker than the others. It was almost orange, and it wasn't so hot but had a sharp flavor with a bit of sweetness.

Grew up with Empress Chili in North College Hill. Always loved it!

@@marksnyder8022 nice! Thank you. I remember always driving by them. My mom made her own amazing Cincy Chili, so I never really ate any of them much…Skyline the most.

They don't all taste the same..they have subtle differences that arent so subtle if youre a cincinnatian😂

Grew up across the river, what happened to Blue Ash Chili? Is it not around anymore or just didn't make the cut? For the record, Goldstar is the best, hands down, no question, no debate 😉

I hands down s hit you not. They got shut down soooooooo many times in the 80's for getting caught for reserving folks leftover chili on the table and adding customers unfinished hamburgers into the chili pot!!! All the time I saw shutdown notices on the front door especially in 1983. Then they'd put the business in another family members name... Reopen then get caught AGAIN by the health department. Geeze.... Sometimes coworkers wanted to eat there in late 80's/ early 90's and my warning never stopped them. I've never tried their chili due to this. And when heard the famous chef Guy ferries ( sp??) was coming to town to try it.... I was like OMG I got to warn him if I see him and tell him must try skyline. I guess what! I freaking saw him downtown but I couldn't pull over to talk to him or else I would have been late to work.

PS I heard Guy has been in a relationship with John Travolta for quite some time. I don't know why I'm telling this.... I think out of shock. I know folks in the industry.

Blue Ash Chili is alive and well in Blue Ash at 9565 Kenwood Rd.
I thought this was going to be a test of which chili was the best...but it turns out that this was just to see if someone could identify the chili.
Dixie Chili is the best - especially the 6 way

Impressive. I'm pretty sure I would have gotten four out of the five. Eat at them a lot. Haven't had Dixie.

How would you place all of these five parlors? What chili parlors (however obscure) should have been in the top five? I hope to do a mini chili parlor tour at some point. Thanks!
I'm new to the area and Cincinnati-style chili. Since I'm vegetarian my choices are limited but Skyline's flavor is the best but, Gold Star's Vegetarian Gorito is my new go to comfort food.

I went through a veggie phase when I lived in the area. I'd have Skyline replace the chili with black beans.

You can buy the seasoning packet and use it on something else. I'll seriously need to rack my brain what my ex used it on and she's usually vegetarian and lives in Sweden. It wasn't tofu. I don't remember. Many years ago. I gave her packets to take home

I'm from NJ. I will fess it up. I don't anything more about chili that native Cincinnatians know about pizza.
I grew up in Cincinnati. I like all of those because they are all Good for different reasons. But, I do prefer Skyline Chili.😀
What army did you take to go to price hill?

Everyone thinks they would. "Yep, that's skyline" is the response to every bowl. The Bud Light of Cincinnati chili.
1960's-70's Madisonville had Art's Chilli Kitchen. Just saying...
Why does the skyline chili crackers in the box taste so different than the in-restaurant one. The ones at skyline came from a cracker factory, the ones in the box came from a rejected paint flavor factory.

Have you compared the ingredient lists on both packages? Aldi's has excellent oyster crackers for the price. They're not the same as the Skyline's crackers, but I suspect they're made by Westminster Bakers Co, given the identical ingredients. Sadly, Aldi's saltines have a different ingredient list and appear to be made by someone else.

It's expensive online. I never used the crackers. If you live in the city then simply run in and say hey... I need crackers for my chili and extra

PS One of these days going to buy many brands for a taste test. I rarely eat them but it's strange how they all taste so different. Some like pure flour.... Others taste ok

Lance brand is just ok. I asked for extras yesterday on soup I ordered somewhere. Makes a good snack in-between meals and snacks for birds

they all about the same recipe they probably get it from the same copacker now days you can't base it on one thicker than the other one day it could be sitting in the pot longer got cook down or one day who getting the chili ready may put more season mix in pot all they do have ground up hamburger in the pot add bag season mix to pot it could vary one day till next from Skyline, Gold Star, & Dixie Chili and the workers

Skyline sucks. The chili is flavorless meat water. Gold star actually has flavor.
