I've been practicing my fried rice, they always suck! But after studying these vids it a lot better. The misen place, the consistent time and temp, portion, well seasoned wok and purposeful movement all seems to be the key. Thanks

Chia, don't feel bad...I tried cooking some a few weeks ago...It sucked too...The rice was over-cooked...Bean sprouts was non-existent...Veggies was soggy...It was more a "rice pilaf " than a "Fried rice"...I was mad as he11!!!...Same with my Egg rolls...Asian cooking is hard, no matter what people tell you....

Patience patience. Do watch more videos. Key basic master fried rice(for me personally) is both the heat and control on timing. Try a three ingredient fried rice of just eggs in wok that has been heated,pre-oiled and re-oiled, get broken/foamy eggs, in with rice, mix everything up until fluffy (don't smash) and season with salt and soy sauce. Whole process in max fire that your stove can do. Then spring onion into the mix until rice starts to bounce on the surface of the wok. Once you get the timing and heat, proceed to movement and specific things like how to achieve specific effects from your ingredients and methods All da best and dun stop wokhei~

Guys, remember you must have a super hot wok. The temp. needs to stay high throughout the entire cooking time. You must not overload the wok or the temperature will fall and the temperature will take forever to come back up, you will wind up steaming your food thinking you are stir frying. Also have all the ingredient ready, the entire stir fry process is just a minute or two so there is no time to fumble around. Hope this helps.

In China, they are the most ordinary people, not culinary artists. They may be unemployed unfortunately. They set up a small stall on the street in the evening to earn money to help the family, and use hard work to support their children to go to college. . Parents all over the world are the same, working hard, raising children, and being the most respectable people.

basically you need salt and msg as seasoning with some Chinese traditional soy sause(not sure what are the names in English because im from CN haha)

Common people don't have the stove like that at home. This kind of flame makes everything cooked in no time, so the rice won't come out all dry, they are well cooked before that, hence the humidity got locked inside the rice. And without a non-stick wok, some rice got stuck on the wok at times, gives the bowl that great searing smell. But afterall, you also need that super cool skill to get them evenly cooked in relatively short time.

Let your rice to cool down before cooking it will help the texture of your fried rice. Usually..

Use leftover refrigerated steamed rice to let it dry out first. Boiled rice will fail. Lots of high temperature capable oil like vegetable or peanut oil, start with the beaten egg. When it’s half cooked then add the rice first (because your home stove won’t be hot enough for you to do the rice last) followed by whatever toppings you wanna add like peas, onions and shrimp or spam. Don’t over soy sauce, msg a must, salt accordingly to taste. Add scallions at the end.
