Hello, this is Artsuki and in this video I show you how to make crispy and chewy Purple Sweet Potato, Pumpkin & Taro Deep Fried Balls. Hope you try out this recipe. Happy cooking!

𝐏𝐮𝐫𝐩𝐥𝐞 𝐒𝐰𝐞𝐞𝐭 𝐏𝐨𝐭𝐚𝐭𝐨 𝐃𝐨𝐮𝐠𝐡
200 grams purple sweet potato, steamed
3 tablespoons sugar
1/4 teaspoon salt
70 grams tapioca flour
15 grams cornstarch
1-3 tablespoons water
𝐏𝐮𝐦𝐩𝐤𝐢𝐧 𝐃𝐨𝐮𝐠𝐡
200 grams pumpkin, steamed
3 tablespoons sugar
1/4 teaspoon salt
130 grams tapioca flour
15 grams cornstarch
𝐓𝐚𝐫𝐨 𝐃𝐨𝐮𝐠𝐡

3 tablespoons sugar
1/4 teaspoon salt
70 grams tapioca flour
15 grams cornstarch
1-3 tablespoons water
Oil for deep frying
𝐏𝐮𝐫𝐩𝐥𝐞 𝐒𝐰𝐞𝐞𝐭 𝐏𝐨𝐭𝐚𝐭𝐨 𝐃𝐨𝐮𝐠𝐡
In a bowl add purple sweet potato and mash while it is slightly hot. Add sugar and salt. Stir well until combined. Sift in the tapioca flour and cornstarch. Mix with your hand to form into a dough. Add 1 tablespoon of water at a time. Add more water if needed until all the flour can be incorporated. Make small balls. Each piece should weight about 10 grams.

In a bowl add pumpkin and mash while it is slightly hot. Add sugar and salt. Stir well until combined. Sift in the tapioca flour and cornstarch. Mix with your hand to form into a dough. The pumpkin is very moist. No need to add water. Make small balls. Each piece should weight about 10 grams.

In a bowl add taro and mash while it is slightly hot. Add sugar and salt. Stir well until combined. Sift in the tapioca flour and cornstarch. Mix with your hand to form into a dough. Add 1 tablespoon of water at a time. Add more water if needed until all the flour can be incorporated. Make small balls. Each piece should weight about 10 grams.
𝐓𝐨 𝐅𝐫𝐲
Pour enough oil in a pot to completely submerge the balls. Heat up oil to 160°C and add only a few balls at a time. They will sink to the bottom, so you must stir. Once they float gently press the balls to double their size. Stir them often to brown evenly. Fry the balls for about 5-6 minutes. Shake off excess oil, and then transfer to a wire rack. Serve them while they still warm.

Óleo para fritar
