Cherry Bread
Serving: 12
Difficulty: Easy
Cooking time: 20 minutes
Preparation time: 15 minutes
450 g cherry, fresh or frozen, pitted
1,5 lt water, 6 cups
450 g sugar, 1+4/5 cups
Crustless stale toast bread, sliced 2 cm thick
Clotted cream, for serving
• To make the sherbet, mix the sugar, cherries, and water in a pan, when it starts to boil spare 2 spoons of cherries for later, simmer the sherbet for 15 minutes.
• Place the breads on a baking tray. Dry and warm up the breads in the oven with fan at 175 C (347 F), for 5-10 minutes.
• While the breads are hot, pour the hot sherbet over the bread.
• Turn on the stove and place the tray on it. Drain the sherbet into the bread over low heat.
• When the breads absorb the sherbet, let it come to room temperature and keep it in the refrigerator for 2-4 hours, or 12 hours if you have time, then serve it with buffalo clotted cream and cherries that you spared before. Enjoy!

    In India, we have a dessert in similar lines called Shahi Tukda (Royal Pieces). Thick traingles of bread are fried to golden in ghee (clarified fragrant butter) and then arranged in a single layer on the serving plate. Saffron infused partial thick sugar syrup in poured over or coated over the slices, which gets soaked up. After that, Rabri: thick sweet milk with almond paste & cardamom powder in poured on the syrup soaked bread slices. Finaly chopped pistachio and almonds are sprinkled as a final touch and enjoyed slightly cold with extra Rabri on the side for a more indulgent experience. Do try it when you want to feel like a Royal.

    There is pudding in Britain called summer pudding which seems similar to your cerry bread. You line a bowl with slices of white bread and fill it with summer berries like raspberries, redcurrants mixed with sugar. You put more bread slices on top and press it down. Turned out on a dish it is served usually with cream. Yours looks very tempting.

    This makes me think of my favorite meal ever!! An Iranian dish with rice, chicken, and cherries, with pita bread below the rice for cooking. That cherry juice drained down into the bread and my family was fighting to get more of it! So juicy and crunchy at the same time. Heaven! I worked with a woman from Iran who was happy to feed us quite often, taught me how to make it.

    Happy New Year to you and your team! I think this is the kind of dish (like dumplings) that is common to a lot of places to not waste stale bread. There's English bread pudding, the old version of Danish apple cake (I have my great grandmother's recipe), Swiss sii, French toast (that's its English language name, but it's not French--dates back hundreds of years), etc. Since I bake my own bread, it's great to see how different places handle their stale bread! Thank you for sharing!
