Calling that poor guy 'Shrek' (he was a bit rotund) in front of a whole kitchen was uncalled for; he was just trying to cope. He also yelled at Marcus Wareing. It was on the news: Marcus broke off from Gordon. Marcus charges £55 at his flagship restaurant for 4 courses. Gordon charges £100 for 3 measly, pint-sized courses fit for a garden gnome at Petrus. _£100!!_ Marcus' venue had 2 Michelin Stars (now 1); Petrus has 1 and never had 2. This is why I dislike Gordon overall.

Legend says, if you listen quietly late at night, you can still hear Marco wanting his kingfish.

You often get to see the two sides of Marco on shows like Masterchef. He is either the angriest tyrant or the most encouraging mentor. The whole reason behind it is on who you are cooking for as a chef. If you are learning or perfecting a dish for yourself as a chef he will teach, encouraging and gently correct you to get the best out of you so you are rewarded by your cooking. In the case of service where you are cooking for others he will yell, curse and bully you to get the best out of you so the customers are rewarded by your cooking.

2 years late to this, but he didn't curse in this video and I imagine he isn't the type to just start blurting out insults like Gordon Ramsay does. He doesn't exactly bully he just exerts pressure because as you said, during service is different from being in practice. Mess up on a day off attempting a dish is only detrimental to you, mess up when serving customers you are dragging your entire kitchen down as well as the establishment. Which is why Marco puts more pressure during service than cooking challenges, because service matters more, and because during the cooking challenges you are serving the chefs, a customer doesn't stand over you and exert pressure when you are cooking so why should he? I'd say he's very fair with how he treats people, it's what you'd expect because otherwise the kitchen wouldn't feel the full gravity of their mistakes if someone doesn't point it out.

1:23 Harry wasn't turning around normally here. Rather, his body was dragged around by the sheer force of his very soul flying out of him because of Marco screaming at him.

I’ve never worked at a fine dining restaurant, but I did wait tables at a chain restaurant for a while. Even there the head cook was commanding and loud, because he had to be. All of those moving parts had to run perfectly, or else service would completely fall apart. Now, at a fine dining restaurant where people are spending $100 a person for dinner, the head chef has to crack the whip. Reputation is probably the biggest factor in keeping a restaurant open, so you need every customer to have a great experience. So I think the way Marco is running the kitchen is correct. It’s not like he’s taking person digs at people *cough* Ramsay *cough* ,he just wants to get the best out of his staff.

Everything he says is actually motivating. He asks "where" and "how long". It's absolutely answerable, and the idea is to know what you're doing, fix your timing and communicate with other stations.

Marco and Gordon are different. Marco is a TEACHER. He's harsh as he's teaching and leading you. No cussing, no throwing personal insults, no throwing/slamming food/utensils. Gordon on the other hand is a hot head who abuses people cause he knows he can get away with it. When I watch Marco, I get this mentor/dad vibes from him. When I watch Gordon, I wonder why people are willing to put up with his abuse and if it's actually worth the money.

@@jeannebye8153 well Gordon is a TV personality. The only time he's ever like that in real life seems to be in his younger years when he was just making a name for himself. Boiling point is what im talking about. Marco is described to operate very similarly to how Gordon does in his TV shows. The fact of the matter is that these people, Gordon and Marco. They wouldn't be who they are without the way they learned and teach. Gordon is like Marco. Marco is like whoever taught him. The amount of pressure and "abuse" it takes to make a legend of their calibre, not just in cooking but in almost anything, is far more intense than what it takes just to make a good cook. It takes this specific kind of treatment to mold people into the makings of a legendary cook or at least a cook of the highest tier and prestige. It's not on Gordon for how his students are treated. If they don't want to be the best, then they never should have gone to Gordon. And if they thought they wanted to be the best but didn't have what it took, then thats that.
