RECIPE
1 whole celeriac and celery
For purée:
200g Celeriac chopped
300g water for cooking
50g neutral oil
Salt
For ragù:
1celery stick
100g celeriac
1 onion
2 cloves garlic
2 bay leaves
1tbsp tomato purée
1/2 tsp sugar
Salt & pepper
For pickled celery:
50g water
50g white wine vinegar
50g sugar
Celery
For crisp skin:

Celeriac is very rich in #umami and has a very unique #meaty texture. In this #recipe I use every single part of the vegetable (root to tip).     I wish more restaurants would cook like this. I’m not vegan or vegetarian but the choices in vegan dishes are often just an alternative version of a meat or fish dish, replacing the protein with something vegan. Whereas this dish is all about the vegetable and the whole dish is cooked to celebrate the celeriac. This is how good vegan food should be made.

    Yeah it’s one of my most favourite vegetables. As you said “very good” I agree because that’s how good the vegetable is. And I can almost say I take no credit for how awesome it is. Yes, I manipulated the vegetable here and there but in the end it was all about “celery/celeriac” Thanks for watching

    I just tried pickled celeriac and beetroot (both grated) and it was so delicious. So I'm standing here with my first ever celeriac chopping it up and found your video. So it was... Just now that I realized that this is the root bulb from celery! That's crazy cool and I'm really looking forward to trying this recipe for the steaks.

    @@Chef-donkey I'll try your meal next time. I cooked the celeriac as you did but left plain. I'll try the tomatoes paste topping next time. I didnt have enough pieces. I've been sticking to a plant-ased diet for four years.

    So I found out that celery and celeriac are 2 different plants, same family. The tops of the celeriac are hollow and not sold for consumption, just thought I would share since I used to think it was the same plant as well! However, no matter the plant source, this is still an amazing recipe :)

    Hey mate. Thanks so much for your kind words. This is one of my most favourite vegetables to work with because of it versatility and unique flavour. If you take out two bold “umami” ingredients we need to substitute it with something which is naturally hi in glutamic acid and the only thing I can think of is celery itself. So I would add: 1tsp celery salt (you can buy this from any supermarket) 1/4tsp sugar ( you don’t need a lot. It will replace the slight sweetness nutritional yeast brings to spice mix) Hope this helps. Let me know how you get on. All the best

    They are just simply boiled pieces of celeriac with a bit of salt. It brings another texture to the dish. Let me know how you get on when you make the dish

    Hi. It's me again. Wondering what you think of calling this "Celery Root Steak?" The place I worked at did a beet root steak and a cauliflower steak that were pretty beloved. Just a thought.
