There are too many influences for this song to list as it been recorded a zillion times. Spencer Bohren's version was a main influence.
Standard tuning but tuned down a half step, E position.

I learned to play this (after a fashion!) from Corey Harris' paid for video course. His way of doing it is also very good & includes a steady bass during the main riffs. My understanding is that Muddy Waters was the first to record it?

Robert Petway recorded it for the first time in 1941 but the "catfish" theme is even older. Jim Jackson, who had massive hits with several recordings of "Kasas City Blues" used the phrase "I wished I was a catfish swimming down in the sea, I'd have some good woman fishing after me" in 1928. If you google "the origins of catfish blues" you'll find plenty info.
