    Monk fruit can crystalize and feel rough on the throat. Allulose is much better in frozen foods. Monkfruit is good in baking.

    That looks so good!! I'm not a big sweets eater, but my husband loves ice cream. Ever since I've gone Carnivore, he is trying to cut out the bad stuff too, and he really misses the occasional sweet treat. He's going to love this! Thanks for sharing!

    I'm with you guys - had to add the monkfruit sweetener to Kiltz's recipe. I also do whole eggs, mainly because I hate trying to remember to use the leftover whites from the freezer. Good stuff, you all are adorable.

    I was not able to make an original comment, but would like to know about this. Chef's Store cream looked so watery compared to darigold when poured. Wonder if that affects the end texture?

    Perfect timing. I was just talking to Dr Kiltz on Rina's weekly Sunday call. I don't have a proper ice cream churner, but I do have a Ninja Creami. He said his recipe should work in the Creami. Thx for sharing :-)

    So awesome! I'm coming up on completing my first month on carnivore this week, and plan on making a version of this to celebrate. I was so excited to stumble upon A2 heavy cream, and I haven't had anything sweet except my flavored electrolytes all month, so this is going to be such a nice treat. I have that same ice cream maker, by the way. It really is a good little gadget!

    Adding a Tsp of either vodka or other hardstuff helps to keep it either smoother and scoopable.

    Didn't think I'd love it in ice cream, but the Torani SF Hazelnut is outstanding here too, along w/the vanilla extract~ SO good! The caramel & hazelnut are definite favorites in our house. Once in a while we get real crazy & crumble up a few ChocZero (oreo)cookies in there too=) I've noticed over the few yrs of making this that different sweeteners do change the taste & texture, but just a little. We've used 100% monkfruit (straight, no erythritol)- which only takes about 1/4 tsp btw, as well as liquid stevia, allulose, vanilla or caramel "Sweet Drops", & xylitol. So far, the monkfruit & allulose work best for us~ but they all work.=) Imho, how each person/family does carnivore is absolutely up to them. The only people squawking about carnivore "rules" are those who lack confidence in what's on their own plate~ which is silly. We're all adults here, & we make our way based on how we're affected by foods, what our goals are, & what tastes good to us, period. Carry on everyone ~Dan & Sammie in AZ #N=1

    This recipe looks good. I just recently started getting serious about carbs in food and I heard about monk fruit but when I checked it out, it actually had the same amount of carbs per teaspoon as sugar. My question is why wouldn't you just use sugar or am I missing something?

    Can't bring myself to eat raw eggs so i cook on med heat to 180 Degeees. I love to add a couple of tablespoons of instant decaf coffee powder for flavor with a touch of vanilla, salt, and a bit a Stevia. No ice cream machine so just into the freezer and stir every few hours.

    For those that are concerned it’s not “carnivore” enough… who cares? It’s about what works for YOU and YOUR body. If a piece of lettuce is good to you. Or a pinch of real sugar… go for it! It’s about your health. Not if you are part of a food-cult.

    Well, there’s likely some “producer guilt” there because they boldly boasted CARNIVORE in the video title, which will attract plenty of hardcore zealot attention. 🤷🏻‍♂️ IMO, there was an appropriate level of explanation given, and the “more pure” option was clearly presented.

    Then don’t clickbait if you don’t want criticism on a video. It’s a waste of time for a lot of us who are using carnivore to help deal with health issues. This is just regular ice cream with sugar substitute which is not at all carnivore so why call it carnivore?

    You both look like such nice people. I love watching your videos. But please don’t take offense to this- it’s not carnivore with sweetener of any kind.     There are people who don't eat strictly carnivore - they mix it up a bit. There is dirty carnivore - where people add things that are a bit more than just meat. They use sour cream, ricotta, cottage cheese, cream cheese, even a bit of raw honey (on rare occasions) to make something sweet - rather then using any "fake" sugar. It can be a wide variety of foods - the main thing is removing carbs. Some people eat a keto-carni diet which mixes keto and carnivore. Some people use spices, and after doing carnivore for a while will add back an occasional green leafy veg. Then there is the carnivore lion diet which is beef, salt, water. Some carnivores eat only ruminent meats. Some people eat only grass fed animals and grass fed butter. Some people do eggs, bacon, meat. The strict carnivores can handle it, but not everyone can manage the restrictions so they try different things for variety and still get great results.

    That is not monk fruit. It is erythritol with a little bit of monk fruit. Monk fruit is fine, you couldn't pay me to eat the other. You can get liquid 100% Monk Fruit and it doesn't need to dissolve and is far healthier.

    It’s not sugar. It’s monkfruit sweetener that has 0 calories and 0 carbs. We did mention that you can leave it out if you wish. That’s what is so great about anything in life, you get to choose and figure out what you want to do for yourself. 👍🏻

    We got ours at US Foods Chef Store. It’s been known as cash and carry in the past! I’m not sure where else to find them! I’ll do some digging and see if there are other stores that might carry them!

    Most if not all grocery stores carry them. Smaller carton. It is safe to eat things with raw eggs because they are pasteurized. Fresh would not be on my list. Too scary.

    Salmonella in raw eggs is actually very rare. I never got sick after eating way too much chocolate chip cookie dough! Well, maybe skyrocketing insulin sick, but not Salmonella!

    I made the ice cream in an ice cream machine it's great. Then I realized the eggs were not cooked is that safe? Like could you get salmonella from the yolks? I gave some to my three-year-old so I want to know.

    Salmonella in eggs is actually very rare. I never got Salmonella from eating chocolate chip cookie dough. I ate a lot of it and often. That ship has since sailed.....

    only problem is with that ice crm maker is so much is frozen on sides and bottom. My nutrition bullet makes it thick in no time and its all edible

    Just a helpful hint, grind your monk fruit sweetener in a coffee/spice grinder to get powdered sugar consistency before adding to mixture

    Technically, all dairy is carnivore. While maybe not optimal: A carnviore diet refers to the consumption of animal-based foods.

    no, speaking just for me, I only bothered to watch because it said CARNIVORE and did not differentiate it was not clean carnivore. Also, I try to find various cleaner recipes to make my grandkids.

    I'm going to try this recipe...it looks and sounds a bit more appealing than Dr. Kiltz's version...but people, the wife in this needs to act considerably more mature. It's a real turnoff to see someone in her mid 30s acting as if she's some squirrely 12 year old, and I almost didn't bother to watch just based on her words and actions at the beginning of the video.
