This recipe of carne vinha d'alhos is really easy to make, it take about 35/45 minutes to cook and it's really tasty, this dish is typical to Madeira Island around christmas time you will find anywhere in the island they will sell sandwiches of this, and for christmas lunch or dinner most households will serve this with some potatoes and vegetables.
1kl pork shoulder or pork belly (has to have some fat in the meet)
10 cloves of garlic
3 bay leaves
fresh thyme
1 fresh chilli
salt to taste
1 glass of white wine
1/2 glass of white wine vinegar
For the fried bread you just need some sliced bread of your choice do dunk in the meet sauce.

I always fry the meat after draining the marinade. After frying I use the marinade to make a sauce using the same frying pan. Yummy molho!.Im sure yours tastes just a good. Thanks

You can do it both ways, but I usually put in the fridge if it’s more than 12h.

No fridge! Marinate in room temperature 48 h.Bruno de Freitas from Madeira told me so😊
