We wrap up canning season with a simple celery stock soup base and a hearty potato leek soup for the times we want a quick home preserved meal. Eric finishes off the evening by cooking up delicious tostadas with our leftover chicken.

    @@cxoot in a world where I am constantly being rushed, I personally enjoy taking a minute to sit back and relax and enjoy their videos. I think it’s a perfect length video. The quiet and peaceful sounds of the outdoors without all the sound pollution is lovely to hear, even if it’s from my phone or TV.

    I like to dry the celery leaves and some stalks and then grind into a power to use as a flavouring and to make a celery salt. You should give it a try.

    That's what I do Alex. it makes the best celery salt. When I get the fresh leaves I also make a lovely pot of soup as well as several stews and casseroles (which to us Aussies is basically stew but done in the oven, stew is done on the stove top). The flavour of the leaves is intense. Michelle

    I love y'all's channel. I prefer how you introduce your goal, tell what you will do, how to go about it, get 'er done and show finished "product". Many channels aimlessly wander or spring from one thing to another and show no real accomplishment. That's their prerogative, but I often find them tedious and skip through or not finish. Congratulation of a quality channel that is a good teaching tool for others who wish to live sustainably and try to lightly touch the earth. Keep on keeping on. Joy Giles

    My mom always used the celery leaves in her home made spaghetti sauce, never wasting anything. I do the same, loving the flavor of the celery in the sauce. Beautiful stock! It’ll make wonderful recipes!

    The leaves are the best part of the celery plant, they infuse such a delicate flavour, my Nonna would make the most amazing tomato salad using the celery leaves and the heart of the plant, so yummy

    I know there are a ton of nutrients in those celery leaves. I would use them for a layer in that permaculture and to feed the chickens since the storage space in limited and winter is already hitting Alaska.

    My husband and I live in southwest CO just 20 miles from AZ. in the San Juan Mountain Range at 7,650 feet.... we love watching your channel... we just discovered it a 4 months ago and we enjoyed so much of what you are sharing we went back to the very beginning of your videos. We are preparing to move back to the midwest, Nebraska and are looking forward to having a garden again .... as we live in the High desert here and without a grow dome not much does well here.     You got me hooked on making celery stock this season when I saw your video from last year, thank you! Always had more than I could use "fresh" and gave away alot. Now, it's a different story and will plant even more next spring. I threw in some of my extra leek as well and froze the stock. It's awesome.

    Love watching you guys....lived in Alaska for 6 years....had the wrong partner...you guys really work well together...love the trips and the every day stuff... My favorite are the fishing trips....Your garden is wonderful...Good for you guys.....i live in CA now and I put thick rubber bands around my canning jars to help stop breakage during earthquakes, They act as bumpers. During the shaking. I've had no breakage....you might want to try that there....God bless you both!

    When you were draining the celery for stock over wire it reminded me of Immokalee Salad. During the Harvest Festival in Immokalee, Florida, plywood and 2x4’s are nailed together and placed over sawhorses. Ice is placed over the plywood and then harvested veggies are cut into chunks over the ice. Some of the best tasting tomatoes and cucumbers are grown in that area of Florida. Fave this video is the Potato leek soup and if course a stroll down memory lane.

    SEDDY KHAN we do not consider it wasteful, our garden soil is living and it needs to be amended, hence why we leave roots and give back the parts of the plants we do not consume. Sometimes it is preference, many times we feed our chickens with our produce and sometimes it is just because of the sheer volume of produce we generate. It was the soil, nature, and organisms that are responsible for the produce and why we feel the least we could do is return some of the nutrients.

    Gosh, another great video! You guys work so hard. Whenever I see celery I am reminded of my mother who always put celery leaves in the oven - the oven had a pilot light and the heat from it worked as a dehydrator. You always had to check the oven for random celery leaves before you did any baking! Your videos are a joy to the senses - the crunch of the celery, the vibrant colors of the vegetables; I could almost smell the dirt in the garden and feel the icy coldness of the well water. Thanks for sharing your journey.

    I have to say that you 2 impress me when I was a kid. We grew up in the sticks ! We hunted we fished and had a big garden . Whit 14 kids that was our life and never did we go hungry ! We milked our cows had fresh milk every day life was a venture . With 7 boys plus my father hunting we would take at least 20 deer in a season . canning was a family thing everyone pitched in . I'm glade to see someone out there like to live like this keep up the good work stay safe and God Bless.

    If you've never done it you don't get the "magic" of "putting food by". Canning is simple but it is an art. It is a very happy and satisfying activity. When I lived in the early 70's in Colorado at 7K feet I had a huge larder with veggies and fruits from my garden and from farms east and west of where I lived. I did not have a pressure canner but I had a sad sorry electric stove. It was 2 AM + before my jars were out, still bubbling and cooling down. Happy times.

    Hi from Australia. Beautiful harvest..well done! To remove the dirt from leeks...cut down the middle from green to white, leaving the end intact. Rinse under running water with the stalk up, so the dirt runs out or wash in water using fingers to remove dirt.

    Di you keep the celery leaves, I buy celery with lots of leaves and use that in my soup as well. You would have a mother load of celery leaves once dried.

    I threw my celery leaves in a cotton pillowcase and hung it in my basement to dry. Smells so good. I am putting them into jars now. I saw this somewhere to dry flowers and leaves so wanted to try it. It worked!

    the leaves have so much vitamins in them. I use them all the time. UNLESS they have bug eating off them or they are yellow then I give to our Chickens. Oh they all look so yummy! Great job!

    Mmmm mmm! A good day's work. Don't you just love getting the last of the goodies out of the garden just in time?! Super inspiring to see how much food you put up for yourselves this time and how committed you are to growing and eating your own food 99% of the time. It's obvious you've chosen the right lifestyle for you as you make it look so easy because of the joy of it! Every time I see something you've cooked up from scratch I end up cooking a lot more from scratch too...and my husband LOVES it! (As do I. : - D ) Thanks for the inspiration.

    That looked so good. I don't have a pressure cooker, and I miss out on so many things. What I can't water bath I freeze what I can. Some things don't work well for freezing though. I do the best I can though. Never tried cow boy candy though. May be next year! The one thing I canned that I should have done more of is salsa! Keep up the good work. Stay warm this winter.

    Hi SalLee, I hope you see this. There is a channel called "Make it Make," where she interviews American Amish community members. They waterbath everything - meat, vegetables, etc. Even low-acid veg like green beans, they waterbath. Most things are about 3-4 hours and a good glug of vinegar to add acid. Another channel called RoseRed Homestead also goes over WBing everything. It is possible, and I hope this encourages you to try things you're missing. I don't mean to take away from this excellent channel, but to share information. Have a great day.

    The celery leaves are super flavorful. I dry them to use as an herb in cooking.

    Just a tip/trick for cleaning Leeks. Leave the root crown on and stick your knife through just above the crown and cut it lengthwise in half. Turn it a quarter turn and repeat. You should have a leek cut into four quarters that you can soak and clean all the dirt out that hides in the leaves. When you are done cleaning it just cut it into desired length and toss the root crown.

    These are two different really tasty soups. We harvest, among other things the celery leaves, dry them or freeze them and then use them in the cold season to give many dishes a really good taste, this is not a lot of work but is definitely worth it💫☘️

    What a FANTASTIC video!! You have been so inspirational!! We live on a third acre in Massachusetts and use many of your techniques to preserve our harvest. Our vegetable, fruit and herb harvest this year was 1,937 pounds and counting. Does anyone else weigh their harvests?

    You can dry the celery leaves they make a great herb and flavored powder. Celery is super healthy for you. Great stock. I dry leaves and other things sometimes in the car on the dash its cheap and really works. I use window screens and leave them in the car for a day or two. Eco-friendly. Maybe not I saw snow the next day.Lo! Soup is the best food ever.

    Being a senior citizen, I’m on a limited income. So I dry by bunches hanging or in the oven with only the light left on. It may take a little longer to fully dry but the taste is the same. 😁

    I use the celery leaves in a green salad and also salad off celery, apple and onion with a creamy sweet dressing. so delish

    You've inspired me to try growing leeks....again. I bought the large American leeks. I've made potato leek soup before. I bought the leeks from my local farmer's market.

    Ack! You can also dry slices and dry and pulverize the leeks. I have limited space so tiny fridge, tiny freezer and few closets to store anything. Since I love the flavors of summer I can still get the tastes of my favorites throughout the winter with the minimum need of space. A little pinch of this or that adds loads of flavors and memories.

    @@RatTaxi I have a 1970s era Ronco dehydrator that I added a solar powered fan to. Load it up and it makes (relatively) short work of drying out anything during the hot summer months.
