Canning Apricot Jam- Preserving the Harvest

I am so excited to be able to can Apricot Jam from fruit growing on my family’s property. Such a blessing to see the wonder of God in His creation. I will never stop being amazed to see how God can take a seed and make it so much more.
This Jam is delicious. Just love it.
My recipe:
1 cup fruit
1 cup sugar
1 Tbs pectin
1 Tbs lemon juice

    I have 1 apricot tree in my back yard and just love apricots! Apricot pineapple jam is one of my favorites. I bought a nice long handled silicone spoon for this and it works great, less noise. I found it at a restaurant supply store. I like those places, never leave without finding some treasure there. I learned what a 1:1 ratio is today, never knew it included the pectin & lemon juice also in it. I use a big soup pot also with jam, it keeps my stove cleaner. Sometimes I wear long sleeves also so my arms don’t get burned with spatters from jam. Yes jam does look beautiful through the jars! Like jewels found in the earth.
