Can You Eat Ice Plant? | Chinese Stir Fry
Can you eat ice plants? The answer is Yes! As a matter of fact, not only are they delicious, they are also nutritious and healthy.
What are ice plants? The ice plant is a common succulent originating from South Africa. In fact, there are a few varieties of the plant in existence, which are native all over Africa. The plant is pretty hardy, can be available all year round and thrives in dryer soil. Which means it is possible to cultivate these on your own, without much care.
Why are they called ice plants though? Certainly not because they are cold and hardy! In fact, they are so named because when you pick a piece up, you will notice that they are covered in what seems like frosting, iced water droplets. However, they aren’t water droplets. Instead, they are water crystalline, filled with saline, minerals and vitamins. From afar, they will look like they shimmer in under the sunlight.
Truly a unique looking plant, you can have them raw and they are perfect for a salad. They are a little salty, crunchy and juicy. Even if you turn them into a stir fry, the plant retains its crunchiness, even with high heat. However, I advise not to cook them too long as that will just kill the nutrients that are in them.
Here is my simple way to having them, with this Chinese-style simple stir fry:
Ingredients
250gm Ice Plant
1 piece of Fermented beancurd
1 tablespoon Cooking oil
½ teaspoon Sesame oil
2 cloves Garlic
Warm water
Cooking instructions
1. Mix the fermented beancurd with warm water to turn it into a pasty solution
2. Finely slice the garlic and fry them in cooking oil, in low to medium heat, till golden brown and crispy. Remove and set aside once done
3. In the same garlic-infused oil, stir fry the fermented beancurd sauce for a few seconds, till fragrant
4. Add a few drops of sesame oil and turn off the fire
5. Toss in the ice plants into the pan and coat them with the fermented beancurd sauce. We are utilizing the residual heat from the pan to keep this vegetable dish warm
6. Plate up and garnish with the fried garlic
7. Serve and enjoy!

The ice plant looks so cool like it came from another planet. My mom used bean curd sauce for veggies and yeah it really gave a flavor boost 🚀

I didn't cook it thoroughly coz the plant can be eaten raw. Also cooking it will kill all the nutrition in the plant. Thanks for watching my video!
