Not just a recipe, but info on the ingredients, other names it goes by, how to select, what to look for and comparisons to other greens that the viewer may be familiar with. This is very good information that I want and is not usually provided. Just bought a $2 bag labeled as Yu-Choy to try from a non-Asian store.

    Yes, one of the few dishes I can cook with no problems. I just made it yesterday and added carrots. The ginger really elevates the taste.

    Simply Classic 。every Chinese Cantonese household surely made this. In my family sometimes substitute other greens like bokchoy 小白菜 or 油菜 even 雪菜 yukina with more bitter taste .

    Can you talk to your Dad about dish management? Meaning, how does he get so many dishes on the table without them getting cold or hot? I have problems remembering the bread warming in the oven when making a simple pasta. I can't imagine keeping track of 3-5 stir fry dishes. Any secrets?

    I have never once had garlic smash the way Daddy Lau does it. I don't know how tall he is, but I am 4'9" and if I try to smash the garlic like that, it goes flying across the room. :-) Also -- I love that Cam is now part of the "cheers". And it won't be long before Maya is too.

    Delicious! I just bought some Yu Choy at an Asian grocery near me (Chinatown - Houston. Texas) I love it!!! I stir fried it with fresh chopped garlic and ginger root. I didn't bother to trim it either. It had pretty little yellow flower buds, totally edible. Such an excellent green - I will definitely get more to cook again. I enjoy your channel. Thank you Lau!

    Such a lavish spread to accompany the actual recipe for dinner! Does dad usually have a lot of food prepped like a restaurant may so he can whip up meals quickly?     Don't know about the other cookware, but his knife is a several decades-old Chinese-style Chef's Knife made by the brand Dexter Russell, which you can still buy today.

    It is easy. It is even more easy when you have more powerful gas stove. In that case, you leave the choy sum a bit wet after washing. Just use high heat to stir fry it continously until done. No need even to put on cover.

    My folks called it, 'tui sum'. Maybe your parents might know which village/county(?) has that dialect? 🤔 I remember mum telling me that when she first learned to buy veggies, she thought having flowers was good! lol A family favorite green was 'yo choy' (or 'yo tui' in dialect). I never thought about the meaning until I learned it's English name is canola, from which the oil comes from pressing the seeds.

    @@mackerelle9789 Oh, no, the family came from a rural district in Guangdong. It may be a village dialect of Toisan. My brother visited HK and tried speaking to people and was laughed at for the 'bumpkin' accent! Pretty much all the Chinese immigrants in Vancouver, BC spoke it until after Expo the 1986 and then in the 90's when a lot of HK'ers bought citizenship and moved their families here. Now there are a lot of Mandarin speakers from the mainland and Taiwanese here. I vaguely recall the adults saying 'Hui Yin Gai'. I think Gai meant 'street' so I don't know. 🤔Granny had fled from the Commies to HK and mum left to 'visit' her a year later and never went back. I think there's derelict property there that the Government wanted to 'give' back so that they could get taxes. 😆

    Hi, what material is this wok made from please? Does stone, ceramic or aniodised woks work as well? I know an aluminuin surface is not healthy for cooking.

    Just bought some Choy Sum, thought I was buying skinny Bok Choy. I thought, "Mr. Lau will be able to tell me how to cook this". Question: I don't have cooking wine, can I substitute Mirin instead?
