At 11:40, I would've played Rxc3. If white had played Nxc3, then Bb3+ is a discovered check while attacking the queen. If white played anything else, you would've been up a knight.

Problem is that the knight doesn't have to recapture because it's being protected by the bishop. If I was in that situation, I'd gain a tempo on the Rook with the dark bishop. If the queen gets threatened by Bb3, I'd follow it with cxb3, and I'm still threatening the rook.

The way they represent 600 strength is so bad. 600 would never do such moves, they usually play engine moves even at low rated but then when they assert their dominance they make an obvious error that no one would ever make even a 600 player. They essentially are saying: look bud, i could crush you if i wanted to but here, let me give away my queen or something. Its not fun to play against these bots.

My experience with chess engines (not at the higher levels though) is that they play very well as long as you don't play optimal, and especially when you play badly, they perform very well. But you know you've made a great move when the engine makes a braindead move. As if it's saying: That was a great move! Now let me reward you with a shitty move. 🤦‍♂
