Campfire cooking: Carmel Apple Pie

This is a camp favorite from my high school and college days. This recipe is for 2 9" pies.
Carmel Apple Pie
6 apples ( peeled and chopped)
2/3c sugar
2.5 Tbs Tapioca
2 Tbs Carmel syrup
1.5 tsp cinnamon
1.5 tsp allspice
1.5 tsp nutmeg
1 tsp vanilla extract (homemade)
Topping
1.5c Old Fashioned Oats
2/3 c flour
3 Tbs brown sugar
1 tsp cinnamon
1tsp nutmeg
1/2 stick butter (cubed)
pinch of salt
Mix apple mixture together in a bowl and set aside for 15 minutes. Mix the Topping together making sure ro fully incorporate the butter. Add 9" pie pan to a 10" or 12" camp oven. Place coals around outside edge of bottom and on top of the camp oven. Turn lid clockwise amd oven counter clockwise 1/4 turn ever 15 minutes. Cook roughly 1 hour or until done.
