Cajun Alligator Sauce Piquante

INGREDIENTS:
- 2 lbs Alligator
- 1lbs Cajun Smoke Sausage
- 1lbs Shrimp
- 1lbs Tasso
- 2 Onions
- 2 Bell Peppers
- 1 Clove Garlic
- 1 Bundle Green Onion
- 2 Cans Rotel
- 2 8oz Cans Tomato Sauce
ROUX:
- 1 Cup Flour
- 1 Cup Oil

    Man, that looks mighty fine. My favorite cuisine. I love to watch you cook and y'all are right Firefighters are great cooks. I learned to cook many recipes at Central Station in Pascagoula, MS. I spent a couple of years in Arnaudville and loved it. Keep on cookin'

    Wait a minute wait a minute wait a minute. Where did u say that sausage was from.? Man that sausage looks so good. That recipe is fire!!!!!!! I’m wondering if we can order ur seasoning in sugarLand Tx or do I have to take a road trip??? Good recipe.

    Sally thank you!! The sausage is from Rods in Church Point Louisiana! And it’s awesome. The alligator is from Crawfish enterprises in Eunice Louisiana and you can order Captain Coby’s Cajun seasoning online at Captaincobys.com or you can take a road trip enjoy some good Cajun food and music! You won’t be disappointed! Infact the Boudin festival is this weekend in Scott Louisiana and that is always a good time!!!

    Every time we make a video it’s to feed a bunch of people not just for video purposes! We are usually pressed for time we do add different things to the sides if we have time!!

    Etouffe has more of a cream base or a light Roux base to it! Where sauce Piquante is more of a tomato base with roux! And Courtbouillion is strictly tomato base! They are very similar but prepared differently! Hope that helps! Thanks for watching! Keep cooking and I’ll see you in the kitchen

    I see I. Your pic you have two small cans of tomato sauce and then a big can. Are you using all three cans of this? If I’m using farm raised alligator meat should I still fry it down like you did the legs and also use mustard

    No just the small cans you don’t need to much tomato sauce! And no Tomato paste!

    I get mine directly from Guidry’s in Eunice! They are hard to find outside of Louisiana! Not sure where you at??
