Man oh Man! I’ve been looking for this type of Cook’n. My Mother is Louisiana Creole, Family originally from Opelousas, La but raised in a little town outside of Houston (Macnair). In that town so much Louisiana Culture was present in my life. The Food, The People, I day dream about those times often❤️ I didn’t know Cajun food was so close to creole ( I guess the main difference is tomato products added? ). Anyway, Thank you so much for making these videos, this food warms my soul from the inside out! Thank you Captain!

I probably watched her play ball a bunch of times. My daughter is 21. She played for La Pride. La Bombers and Diamond Express. She got recruited to go play at LSU-E. But she decided to focus on school. Guess where she is now? UL Monroe. Just started her 4th year in pharmacy school. What a small world.

Most of my pots got passed down from family! But shop around you can find some good deals! That’s not a bad price for a 16 quart!

I crowd it because i usually have a ton of meat to brown and when you put a lot of meat it often waters a lot! But once the water is gone you definitely get a good sear!

So the way I was taught, and the way everyone I know in LC does it, is that you fill it up with water/stock, then reduce it down to almost a syrup, creating another darker, thicker, richer gravy base, then fill it back up and do it all over again for several hours. But I keep seeing people on KZread like yourself just fill it up and let it simmer and call it a day. I’m wondering if it’s just a lake Charles thing - the reducing and reducing. How to you ever get it thick and more concentrated?

There really isn’t a right or wrong way! It’s what ever make it good! But there a few different ways to get it thicker! Your way is one! And I have done it that way before it would just make my video an hour long! Lol but if you add more onions and bell pepper it will thicken it up or you can add a little flour or corn starch and that will thicken it up as well! Hope that helps!

oh lord, I cringed when you just dumped that bag of beans in there without washing them off or sorting them. I have cracked a tooth on a stone in someone's beans who didn't sort them. ALWAYS SORT, ALWAYS WASH. they are covered in dust and field dirt usually.
