Yum! Sounds great. When time is a premium, Tacos made with fatty brisket or scrambled eggs with brisket breakfast tacos/burritos are seriously addicting and a just the thing when you are out of time for a more sophisticated recipe like this one.
Looks great, and outside the norm of everyday tacos. There are always brisket leftovers. I'll have to make some.

@@SmokeTrailsBBQ I feel you on making a salsa/or sauce. The consume is fucking next level especially if you've got fried tortilla/fried cheese it helps give the taco some needed moisture - that being said, it limits your taco to what will fit nicely in the tortilla and stay put haha

Might be blasphemous, but when I cook a whole brisket for just my wife and I, we do the 1st night as just slices. But everything after that it's used for tacos of all sorts! I really like sliced brisket but it's even better when on or in something... Making home made ramen or Thai curry, why yes ramen please. Taco? Breakfast or street? Doesn't matter it's happening. Opportunities are endless!
