Braised Chicken and Shiitake Mushrooms
During winter months, my mom used to always have some sort of stew or braise going on a slow burble on the stove.
I’m slowly becoming my mother.
Either that or I’m experiencing some sort of seasonal metamorphosis (aka laziness). ‘Winter’ has finally hit southern California and all I want for dinner are stews, braises, anything I can throw into a pot, no fuss.
Here’s a simple recipe for braised chicken and shiitake mushrooms. Full of umami flavor from the shiitake mushrooms, clean, easy and goes great with a bowl of steaming white rice. Fill your tummy with satisfying warmth. Enjoy!
Ingredients:
8 large shiitake mushrooms, trimmed
1” knob of ginger, sliced
3 scallions, trimmed and halved
2 lbs of chicken
1 cup of chicken stock
2 tbsp of shaoxing wine
1 star anise pod
5 dried chili peppers
2 tbsp of dark soy sauce
2 tbsp of regular soy sauce
Directions:
1. In a large pot, add chicken, chicken stock, shaoxing wine and ginger. Bring to a boil over medium high heat.
2. Toss in the star anise pod and dried chili peppers. Lower to a simmer and cover. Simmer for 30 minutes.
3. Pour in dark soy sauce and regular soy sauce. Add scallions and shiitake mushrooms. Cover and simmer for another 15 minutes.
4. Serve with rice and enjoy!
Notes:
If you can’t find fresh shiitake mushrooms, you can use dried shiitakes.
If you can’t find shaoxing wine, you can use rice wine.
This is pretty mild and clean in flavor, if you find it not salty enough, feel fry to add a bit more soy sauce.

    I enjoy this video very much because of the sounds: you hear the "kitchen sounds" in the foreground and in the background there is this soft and chilly music. Perfect combo. Perfect choice!

    what's the different between dark and regular soy sauce? is it the taste, thickness, or...? thanks in advance :-)

    Dark soy sauce has a bit more caramel flavor. It also gives the dishes a darker, richer color. If you don't have dark soy sauce, you can use a little bit more regular soy sauce.

    thavaputhren periasamy you can’t taste the wine it’s just part of the cooking ingredient it’s called Chinese cooking wine
