Black Bean Paste Recipe | How to Make Black Bean Sauce in India for Jajangmyeon and Korean Recipe
In a perfect way to make black bean paste at home with proper instructions. Its simple black bean paste recipe with minimum ingredients is available in our Indian market.
What are black beans?
Fermented black beans mixed with traditional ingredients are one of the most popular sauces on the Chinese/Korean menu. This spicy, earthy sauce is easy to make and will last up to a month in the fridge. It can also be frozen in small portions for easy use for quick frying. Due to the salt content of the beans, there is no need to add salt to recipes where you use this sauce.
Ingredients:
7/8 tbsp sesame oil/cooking oil
6/7 cloves Chopped Garlic
1 inch chopped ginger
2 tbsp chili flakes for dried chilies
2 tbsp light soy sauce
2 tbsp rice wine vinegar / Apple/White grape juice would work, it’s not a big deal to skip the rice wine

How to use Sauce?
Not to be confused with regular black beans, fermented black beans can be found at your local Asian grocery store or online. They are filled with liquid or drained and sold in tightly sealed bags. If you are using one type of can, drain before rinsing.
Usage: Stir well, use about 1/4 cup to stir for 4 people. To stir, dilute with a little stock, water, or soy sauce. Use as a marinade for ribs, chicken, or fish. Always pour in a small amount of pure sesame oil to prevent it from forming. Add plenty to your favorite ramen dish as it is an ideal base for dishes or soups made with noodles.

After coming across many korean and non Korean videos of chunjjang I was so frustrated they kept using regular black beans and not fermented black soybeans . Upto 1 yr...If opened, the black bean sauce needs to be used between six months.😊
I thought Oyster sauce should in there? You know like in the green samyang ramen noodles. Could you make a video how to make the sauce from them?
I have soy gluten allergy is there a way to do this and the black bean fermented too...
I tried fermenting the beans and it was fine for the first three days, but then one of my family members opened the pot i was storing the beans in, and it seemed a bit rotten, i made the sauce with it anyways but i was afraid of eating it, is it okay if I consume it?
I my town I didn't get bean past I am searching for this receip yours is nice easy and simple thanks for sharing how long we can keep it in the fridge

Hi Tanisha, I have successfully fermented the black beans . I made a paste with 1 chilli n few garlic while grinding. I sauted it in oil with lil brown sugar and salt. I am going to preapre the sauce following your recipe but cannot use all the bean paste as i amnot sure about the outcome (because i fermented the beans at home). So want to try with 1/4 portion ( 2 cups cooked paste). So my question is how long i can store this cooked/ sauted paste in fridge and should i cover it with oil to prevent any mould? Please do answer my query. Thanks 🙏

The beans will last for up to a year under these conditions. Unopened black bean sauce will keep for up to two years on the shelf, and for several months once opened. Store opened jars and bottles of sauce (tightly closed) in the fridge. Just use beans whenever you want and closed proper and store. 😊

If you fermented this beans at home then I will advise you to always check the beans condition and store in tight container. The beans which I use in this video can last upto 6 to 1 yr or longer period.

After that black bean sauce is made, do you just pour some over Asian noodles to make a Jjajangmeyon - Korean style?

White vinegar and rice vinegar their flavors are completely opposite. Rice vinegar is incredibly sweet and delicate, while white vinegar is sour and harsh but you can use just add little bit of sugar to balance the flavour. Try to use white wine vinegar or rice wine .😊

No it’s black soy beans which is fermented for 6 months. It’s much better if you buy online on Amazon. Link in description.

Hi, I found fermented black beans and the ingredients are Black Bean, Salt, Soy Bean Oil, Sugar, Water, Sesame Oil, Chili. So do I just drain it and follow the steps? Or can I just move on to blend the drained beans?

Soak the beans for 2/3 min. simply rinse, drain, then followed the other steps. Saute beans with all ingredients, then make a paste. Don't add salt. Store in an airtight container once opened finish within a month. Unopened container can be stored longer period. It's take time but you will love it! 😊

Black beans( black soybeans ) that have been salted and fermented. You cannot use canned regular black beans. If beans are salty & fermented then you can use it.

It's depends on dish, I suggest you to use Hoisin sauce instead of black bean paste. Red beans and fermented black beans are completely different in taste.

These black beans are salty, savory, and some say slightly bitter. Don't worry about the taste.. use in stir fry vegetables or meat then you will feel that it's turn so well. You will love it!

I read the recipe somewhere that we can ferment black beans at home by soaking them in water for a while, then boiling them, than transferring it into a clean bowl covering it will plastic wrap with holes so it would prevent from stinking! Will this process to the magic? I mean like if I used the fermented bean paste at home for ya recipe?

They have a very salty, pungent flavour. To make Fermented Black Beans, cooked black soybeans are fermented in the water they were cooked in, then drained and mixed with salt, garlic and spices and allowed to dry in the sun. I will share the detail recipe but it will take time to post😊
