This week, we say a bittersweet goodbye to the old BwB studio with a Swanson's swan song, and probably the longest episode name to date: The Four Horsemeals of the Eggporkalypse from Parks & Rec. A fitting goodbye, a breakfast that could comfortably feed a family of four (along with some aunts and uncles), prepared on the very same flat-top that seared the sixteen-some-odd patties flipped in the kitchen's inaugural episode.

    I stumbled across this video again and wanted to share something. Andrew, my extended family made the Four Horsemeals of the Eggporkalypse for our Christmas dinner this past holiday season (with a couple store-bought substitutions to compensate for our lower cooking skill). Me, my sister, my two brothers, my sister-in-law, my mother and father, my paternal grandparents, my maternal grandmother, and my cousin all had to split it into two separate meals. And thanks largely to your recipes, it came out absolutely delicious and pleased EVERYBODY.

    Starch loves water and the natural starches in a potato are already somewhat wet whereas powdered starch is totally dry and will suck up any extra water in your hash. Water is really THE enemy of good hash browns and tots. It makes a difference!

    @@confusedwhale Salt water isn't going to have the same water drawing effect that dry salt has. Swapping the water for salt wouldn't do much aside from seasoning. If you do want to try to use salt as a drying agent, the best stage to add it would probably be the towel drying for the first hash brown method and the sqeeze drying for the second. Would be an interesting experiment!

    I enjoy that the ad about the scotch malt was specific to this video, it is not like a garbage ad for something that has all these unnecessary sound effects and overly emotional voices. The transition was smooth with the ad still in babish's signature voice. Lovely that you did that.

    As a new watcher, but not new to the kitchen, I have been enjoying your show. You humor is on point, I enjoy what you do, and I get new idea even in areas I thought I'd mastered from time to time. Your heartfelt statement at the end of this video is, well, obviously heartfelt, and frankly, awesome. I will continue supporting in some ways because of this alone. Cheers.
