Binangkal
Binangkal also called Fried Sesame Balls is a deep-fried crunchy and
dense dough balls coated with sesame seeds with the classic cracked top originally from the Visayas and Mindanao. They keep well and are delicious even when they are days old. My version has a soft interior and a crunchy exterior. I had a tutorial video of this last year in our Caro and Marie Facebook page. In this new tutorial video, I included an ube version which was inspired by a friend who suggested the idea to me. I hope you can try both the classic and the ube. Chef's Notes:
1. Adjust the water or water if the dough is too dry. Please review the video to see the correct consistency of the dough.
2. Do not make the balls very big because you do not want the binangkal that is raw inside and burnt outside. I suggest a dough the size of a ping pong ball.
3. After you form the balls, roll in sesame seeds. Press them together so that the seeds will stick.
4. Allow the binangkal dough to rest for at least 15 minutes before frying so that you will get a nice crack on them.
5. Cool them very well before storing so they will stay crispy.

Mam question, applicable Po b sa binangkal ung technique used sa buchi pra dumikit ang linga, ung slurry coat first before sesame. Thanks po. Plans to sell binangkal in six flavors( ube, strawberry,melon,buko pandan,mango and vanilla almond)

chef Rose, pwede bng instead of white and brown sugar ang ilagay ay isang lata na lng ng ube condensed milk?
I do surf YT . Somehow I gravitate towards this channel for favorite foods . My best friend upon landing a job in NYC was a Miss Cebu, a captivating beauty alright who introduced me to homemade binangkal. I grew up snacking those , fried in coconut oil. I'll make this for my precious Apo' , her adventures mostly revolves on new foods , her fave is brocolli ( " baby trees ")😮.

If you brush the rolled dough balls with water before dropping them into the sesame seed tray , the sesame will stick to it then fry.

chef kung pwede sya ube binangkal pwede sd cguro sya buko pandan or other flavor of binangkal. like sa banana Puto chef ako sd sya gi mix ug Malunggay. so yummy and healthy banana Puto with Malunggay. Dati, nakikita ko lang itong binangkal sa bakery, hindi ko pinapansin, pero noong minsan nag uwi yung anak ko as pasalubong saamin, at ng matikman napa wow kami lahat, masarap pala sya, kaya hinanap ko kagad sa yt, i try ko po ito gawin chef thanks po for sharing your recipe, i have tried your chiffon cakes, at natuwa po ako, kasi nakagawa ako ng yema cake, so yummy po😋
Mam ok lng po ba sa binangkal kh8 flavoring lang wla nang powder. Let's say strawberry or melon.

I use full cream powdered milk but any milk is okay.
Chef i dont have ube powder, if i add real ube how much po and i add ko? Thank you Chef for this recipe.

You need about 1 cup boiled and mashed ube for this recipe. Add the milk/water gradually so you don't end up with a wet dough. Thank you for watching.
