Tamales are a traditional Mexican dish made with a corn-based dough mixture that is filled with various types of meat or beans and cheese. Tamales are wrapped and cooked in corn husks or banana leaves, but they are removed from the husks before eating. Try them served with pico de gallo on top and a side of guacamole and rice.
What is tamale masa made of?
Masa is made from hominy that is treated with a lye solution and ground very fine, more like flour. It is used to make tortillas and tamale dough.

    Is it sacrilegious to use bacon grease instead of that lovely rendered lard in "supermarket" masa? Also, your opinion on a tiny bit of baking powder? Thanks so much for this series... stay tuned, everyone!

    Hi Donna! I wouldn’t use bacon grease because many times bacon has artificial smoke flavors added that are distracting. However if it’s a natural bacon with no flavoring, chemical cures or sugar added then I would say yes. Re baking powder I would say no but that’s for my taste. I think Baking powder makes tamales a bit cake like in texture which is not that authentic. But I know baking powder is used. Give it a try and let me know what you think!
