    I use the whole leek (being Welsh). The way I clean one is to put the point of the knife at the end with the beardy bit and make a whole length cut. Turn the leek over and make another lengthways cut. This opens up the layers and you can run it under the tap and clean it more effectively. Then dice as normal. Doing it this way gives you more leek and adds bulk.

    xfilion exactly! I also use wild Garlic when it’s available (I live in North Wales, so it’s easy to find growing wild - just follow your nose!)..... can’t beat Leek & Potato soup...... with cheese croutons and some crusty farmhouse bread. You could add a little cream to stir into each bowl of soup at the end. Wish I hadn’t watched this at 11:30 pm, ‘cause now I’m hungry!

    I use the dark green tops slice them super thin and soak them in butter milk then coat them in flour/cornstarch and fry them. Good for a topping

    I use the whole leek too, not going to waste. I just cut up the greener parts smaller.

    Way better recipe is. 2 Leeks. 2 Medium size onion. 5 Medium size potato. Cook the leek and onions in butter until translucent on low/medium heath. Then add the potatoes and let it cook for a few minutes. Add chicken stock to cover, and let it simmer until everything is soft. Mix it, add salt, white pepper to taste and finally add half a cup of heavy cream and let it come to a simmer, stir and eat with with buttered bread and a good cheese.

    Instead of putting margarine in the pot after the leeks, cook one or two strips of bacon in the pot nice and crispy then sautée your leeks in the bacon.

    You want to gently sweat the leeks with out browning or introducing any fond to them. You could cook the bacon and deglaze with stock, separate from the leeks.

    I've made this many times and love it so much! But the best way to clean your leeks is to slice them up into a big bowl of clean water and swish them around first. Then let everything settle for a few minutes (up to half an hour). The sliced veggy will all float on the top, with all the dirt and grim settled on the bottom of the bowl. It's easy: just skim the clean slices off the surface of the water, and drain in a colander. :)

    Great, easy recipe! It was delicious! I did the tots and all. I used organic Leeks and they were quite clean. I also left the skin on my potatoes. It turned out fabulous! Thanks for the recipe!

    Immersion blender. I use a Bamix which comes from Sweeden. It is great for blending or pureeing soups in the pot.

    Oh man I made this Potato Leek Soup today because I’m from a place right on the arse end of the U.K. Map called Lowestoft the Most Easterly Point of the U.K.! It’s absolutely Freezing here and we were all freezing are arses off so I decided enough is enough and made this Soup the same way as how you have made it on here and oh my Lordy lord it was amazing! So comforting so warm and perfect when your sitting at home bored whilst all this outbreak is going on! I love watching your cooking videos because not only are you a great laugh you cook such amazing tasty food which makes me drool like a puppy lol!     Instead of Worcestershire we add a scoop of sour cream. We also reserve 1 potato to cut into cubes and add after the rest of the soup is blended. White pepper can be used as well as a pinch of cayenne. Haven't tried the tater tots but that sounds wonderful!

    Homemade croutons will do in place of the tots and fresh grated Parmigiano-Reggiano cheese heaven on earth .Thanks Sam I came across your channel because this is the first time actually I am cooking leeks I surf the Internet and after few videos on KZread yours was the best from the start to the end my dear don't listen to the people who they have no sense of humor . I don't think you are aggressive .     What are potato tots.? There are lots of things to add: green onion tops shredded, chives, spiced cubed bread for crunch, whipping cream. Tots are little kids learning to walk (totter, get it? )so potato tots must be the tiny baby potaoes you get when digging up your spuds in the garden. Nice kitchen, great soup and leeks are so easy to grow and so expensive. One of my favorites.

    Leeks, Allium ampeloprasum. The genus Allium also contains the onion, garlic, shallot, scallion, chive, and Chinese onion.

    @TheWhitetailrancher, Have you ever LOOKED at the interior of your bunch of celery stalks? Or a natural Romaine lettuce -- before it is de-nuded of the floppy outer leaves, and squeezed into a tight plastic bag for "3 Romaine ♡s"??? THEY ARE FULL OF DIRT, and sometimes a "hitch-hiker" or two! Leeks NEED TO BE WASHED WELL!

    Looks tasty! only thing i would change would be instead tator tots, I'd use croutons and I wouodnt have blended it as much a few lil chunks od potatoes and string of leaks would make it perfect ! Good job Sammy

    I always add mustard. And the most flavor is in the dark green part of the leek, I slice it all the way from top to bottom and then I wash it. Oh yes and instead of using chicken broth with a soup that consists of vegetables ..... vegetable broth. It's swearing in church my grandma used to say. Vegetable broth with vegetables, and meat broth with meat. Onion broth and mushroom broth can go with everything.

    The white & light green part of the leek are in the “dirt”, not just the roots. If only the roots were in the ground then it would all be the darker green.

    Ah luv ya man that is Yum yum yummy I am totally doing that tonight - Too full for dinner but I can totally do Leek soup or imitation leek soup shallot & onion is totally a leek replacement but yeah that soup recipe looks like the bomb!

    Like the recipe- I'd do it like you did/w/tater tots, but I'd add instead of chives, fresh dill and a sprinkling (definitely a sprinkling) of "Hot Hungarian Paprika". to the soup.
