As for the hydration of the dough in the video, it's best to reach out to the pizza shop directly for that specific information. They would be able to provide you with the exact percentage of hydration used in their dough. Generally hydration refers to the total quantity of water in the final dough .Hydration is calculated by taking the weight of water or liquid in a recipe and dividing it by the weight of flour to get a percentage. For example: Flour: 1,000g ,Water: 750g ,Salt: 20g ,Yeast: 10g . Remember that hydration = water / flour. So in the recipe above, if water is 750g and flour is 1,000g, the total hydration of the dough is 750 / 1,000, or 75%. . Enjoy your pizza-making journey! A warm greeting !
