Hi, Love your video's. A suggestion for charcoal. I use B&B now exclusively in my weber kettle grills and smokers. I use about half the amount of B&B and it burns hot and longer than all others I've tried and I've try a lot, lump and briquettes. Haven't tried any charcoal just the gas burner with hard woods in my Bertello Pizza oven with great success. I plan to try B&B ASAP, I'll let you know how it works out. If you can find B&B in your area I highly recommend it.

I don't get how their instructions say to start using once the back reaches 800F. I couldn't get it it anywhere near that hot.

What fuel are you using? You can definitely start cooking sooner, it will just take longer.

It allows the flames to reach for the front of the oven and over the pizza

They haven't said anything, because they produce no flame so they aren't the greatest option alone. Briquettes are a great base though and then they can be feed wood chunks to provide flames. Keep cooking!

@@fablan3308 nah man it gets to temperature very easy. This oven is awesome. This guy was showing an experiment with just 4 brickets. You need more and extend the whole length. Also use wood. I have mine roaring over 900 in like 15-20 minutes.
