Today, it’s all about beer! Shizuka and Kai hit the streets of Shinbashi to explore Japanese beer culture, learn about pouring techniques, and meet some of the best in the beer business.
Japanese beer culture is heavily influenced by "omotenashi," which translates to hospitality. This principle extends to how beer is brewed, served, and consumed. Japanese beers are typically known for their clean and crisp flavors, and this is not only a result of quality ingredients but also how they are handled throughout the brewing and serving process.
A perfect glass of beer requires four key elements: temperature, pouring technique, aroma and flavor, and the right glass. Our beer-loving duo embark on their hoppy adventure by walking to their first stop… Dry Dock! Shizuka and Kai enter this cozy, nautically themed bar and are greeted warmly by Baba-san, the owner. He gives them a rundown of the bar’s history before getting down to business! Sato-san serves our hosts Asahi Super Dry Beer using a variety of pouring techniques, each of which results in a unique tasting experience.
Following this, they feast on some food before moving on to the next venue… Brasserie Beer Boulevard. Greeted by Sato-san, the cheerful owner, they make their way to the bar where he demonstrates his original pouring technique and beyond.
Post-beer, they enjoy some roasted chicken and sanma carpaccio before making moves to their third and final destination… BIER REISE '98. Shizuka and Kai meet Matsuo-san, the owner, as he introduces the history of his bar (which has been operating for 74 years). He demonstrates his original pouring technique to the delight of our hosts, before serving them another round of food including a ground meat cutlet, flame-seared bacon, and a potato croquette.

Love you guys! Shizuka you’re a master at being a host!! I know it’s not the focus of the channel but man a mini series on things to do in Tokyo would be sooo awesome! Could call it Japan by Foot 😉
I've added some beer spots to my saved Maps locations, thanks! The last bar definitely has the best and most authentic pour in my opinion. Fast and naturally foamed straight on the beer dripping mat, that's how I like it! Depending on your preference I'd say use thin edged glass for a crisp experience and thicker round edged glass for the smoother entry.

I heard a theory once that the fluffy head may be due to the CO2/Nitro mix theyre using and so that's probably why you'll almost never see a head like that in the US where CO2 % used is likely higher. Also the real Matsuo pour looked nothing like that one.

reminds me of one of the first videos I saw of Shizuka at a street food area when they poured her cup to the top and I guess the preferred method was to bend down to sip it, gonna go look for that one, these locations look like so much fun though, I do love smooth beer and cutlets

This is why I love Japanese people. They are so worldly. Mr. Sato went all the way to the Czech Republic just to learn a beer pouring technique. You'll be lucky to be served simple cold beer, here in Canada. It's almost always warm. 🤢

Someone I know recently combined Maple Syrup & buttered Popcorn thinking it would taste like caramel popcorn. It didn’t and they don’t recommend anyone else do it either.

Yep in Germany you can start again if you serve foam instead of beer but what do we know about beer...
Gotta say, as an Australian beer nerd drinking NEIPAs - in Japan, even low cost every day beers tasted great at Matsuyas because of the secondary foam tap pull that delivered the creamy head. Would love to see the technology adopted here!

There is a Japanese-style lager that’s featured at my local micro-brewery called “Gaijin Dream.” It’s terribly well-balanced, with just a hint of something citrus at the back-end. If you ever find yourself in Oregon, I’ll buy the first round. 🍻🇯🇵🙇♂️

That Gun Free Zone sign threw me off 😂 seeing how it's banned for 99% of Japan population. That sign is as effective as it is in the US.....😂 no effect but helps you FEEL safe.
I saw a cooking video on here youtube earlier today and the guy used sake to drain the blood of a turtle. I don't think you would do that in beer. tho
