Beef Doenjang Jjigae 소고기 된장찌개 | Korean Fermented Soybean Paste Stew

Doenjang Jjigae is a very popular traditional stew in Korean cuisine. This is a very classic homemade meal that is enjoyed with rice and any variety of side dishes.

➥ INGREDIENTS | 재료
For 3-4 servings:
• ~2.5 cups rice starch water (water obtained from rinsing rice) 쌀뜨물
• 1 medium peeled potato, medium diced 감자
• 1/2 zucchini, medium diced 주키니 호박
• 3 shiitake mushrooms, medium diced 표고버섯
• 1 jalapeño, medium diced 할라피뇨
• 1 red chili pepper (use 1/2 for the toppings and the other 1/2 for the soup) 홍고추
• 1 small onion, medium diced 양파
• 1 scallion (use the white part for the soup and the green part for the toppings) 파
• 1/2 block tofu, cubed 두부
• 1/2 cup radish, thin squares 무
• 2 tsp cooking oil 식용유
• 1/2 cup sirloin (can use any cut), bite-sized 소고기
• 1 tbsp minced garlic 마늘
• 1 tbsp Korean red chili powder (ie. gochugaru) 고추가루
• 2.5 tbsp soybean paste (ie. doenjang) 된장

0:14 Before cooking the rice, save ~2.5 cups of the water from the second rinse for the soup base
0:27 Peel the potato and cut into medium diced pieces
0:44 Let the potatoes soak in water. This will help the potatoes keep their shape in the soup.
0:49 Prep the rest of the ingredients
2:15 Heat the oil over Medium heat. Cook the beef until browned.
2:35 Add the radish and stir for 1 minute
2:56 Pour in the rice water and boil for 15 minutes
3:07 Skim off the scum
3:17 Drain the water from the potatoes and add them to the soup
3:25 Add the rest of the prepared vegetables except for the tofu and toppings
3:34 Add the minced garlic, Korean red chili powder, and soybean paste
3:56 Boil for 10 minutes. Add extra soybean paste to taste if needed.
4:14 Add the tofu. Boil for another 5 minutes then add the toppings.
