BAKED BANANA OATMEAL RECIPE:
2 cups old-fashioned rolled oats
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
3 bananas 1 mashed, 2 sliced into rounds
1/3 cup egg whites (or 5 egg whites)
1.5 cups 2% milk or whatever type of milk you love
1 tsp vanilla extract
1 tbsp. coconut sugar optional

Instructions
Preheat oven to 375ºF and grease an 8×8-inch baking pan. In a large bowl combine the oats, baking powder, salt, and cinnamon. Set aside.
In a medium bowl mash one banana with the back of your fork until you have a baby food-like consistency. Mix in egg whites, milk, and vanilla. Combine everything together and then pour the wet ingredients into the dry ingredients and combine well.
Line the prepared pan with one sliced banana. Pour and smooth the oat mixture over the bananas and then top with the other sliced banana. Sprinkle sugar over the top and then pop in the oven for 40-45 minutes or until golden brown and cooked through.
Cool and slice into 4-6 pieces and enjoy.
NOTES
This recipe is naturally sweetened with bananas and uses no additional sweeteners (aside from the optional sprinkle of coconut sugar over the top). If you like your oats sweeter, drizzle with maple syrup when serving.

If I were going to add protein powder, would I adjust the amount of liquid?
I just made this but I only had one brown banana so I used a chopped apple for the bottom and a cup of blueberries on the top. It turned out so good, I will be making this again. Thanks for sharing the recipe.

I remember this recipe from a few years ago. I added some walnuts and a little hemp, flax and chia seeds.
I live in Amish country and baked oatmeal is plentiful in the stores. All different varieties. I love it.

Love making baked oatmeal and then freezing it in squares for easy breakfast. I add chia seeds, hemp hearts, peanut butter and protein powder. I get some sweetness from a few dark chocolate chips vs extra banana on bottom.

LOVE this recipe idea and cannot wait to make! I personally appreciate lower-fat recipes not that I'm afraid of fat but I enjoy getting my fat content from other sources, i.e. peanut butter, almonds, etc. so THANK YOU!

made this recipe for years. it's super versatile with adding and subtracting stuff. i usually didn't put banana on top or beneath but put more bananas in the wet mix.

I only had 1 banana and I'm UK based so did conversion to grams, mine look wetter, it's in the oven so hopefully turns out OK 😁

What a wonderful healthy breakfast bake! Watch the short video for her variations! I love her healthy cooking! Here's what I did; I greased my 7x11 Pyrex baking dish with butter, I used 2 eggs instead of the egg whites, I added 2 TBSP of Maple Syrup and 1/3 cup chocolate chips! The bananas are the sweetner in this bake so the banana that is mixed with the wet ingredients has to be black and the bottom banana layer and top banana layer just need to be ripe, but the riper, the sweeter. The 40 minute bake time was perfect!

Hi Dani, Could cauliflower be worked in and the amount of oats reduced a bit to reduce the net carbs for a diabetic? Also, have you ever tried adding protein powder in this one?
I've never tried baked oatmeal and will remedy that soon! As per the interesting comments on your website, I'll use a few flag eggs instead of the eggs. I'll be back with a review!
I bet if you could throw in a teaspoon of French vanilla extract to get the maple syrup flavor without adding more calories. We use it all the time with overnight oats.

I like baked oatmeal as a breakfast option. I noticed some recipes call for baking soda and others call for baking powder. Are they interchangeable?

Baking soda needs an activator. Baking powder doesn’t. If you’re using baking soda you’d need some kind of acid in the recipe.

Can you tell me why you only use the whites of the eggs? Can I use 3 whites and 2 whole eggs? Isn't it higher nutrition to use the whole egg-may be too much fat? I just don't want to waste them.
