AUTHENTIC UKRAINIAN BORSCHT RECIPE (Борщ) | my grandma's beet soup

Today I'm sharing my grandma’s Ukrainian Borscht Recipe I grew up eating in Ukraine every single week. This iconic red beet soup is made with beef (or vegetarian), cabbage, potatoes, carrots, garlic and dill, and then served with a dollop of sour cream and rye bread.

►INGREDIENTS:
12 cups water, beef or vegetable broth/stock
5 cups green or red cabbage thinly sliced
1 large onion chopped
3 medium carrots chopped
2 tbsp olive oil
3 large beets peeled and cut into matchsticks
4 large potatoes peeled and cubed
6 oz can tomato paste low sodium
2 tsp salt
3 bay leaves
1 tbsp white vinegar
Pinch of sugar or maple syrup
3 large garlic cloves grated
Ground black pepper to taste
1/4 cup dill or parsley finely chopped
Yogurt sour cream and rye bread, for serving

►DIRECTIONS:
1. In a large pot (I use 6 quart Dutch oven), add broth, bay leaves and bring to a boil. In the meanwhile, wash, peel and cut vegetables.
2. Once broth is boiling, add cabbage, cover and bring to a boil. Then reduce heat to low and cook for 20 minutes.
3. In the meanwhile, preheat large skillet on medium heat and swirl 1 tbsp of oil to coat. Add onion, carrots and saute for 5 minutes, stirring occasionally.
4. Add beets, remaining 1 tbsp of oil and cook for another 3-4 minutes.
5. Transfer sauteed veggies to a pot along with potatoes, tomato paste and salt. Cover, bring to a boil and cook on low heat for 20 minutes.
6. Turn off heat. Add vinegar, sugar, garlic and pepper. Stir and let borscht sit for 10 minutes to allow flavours to marry each other. Add dill, stir and adjust any seasonings to taste.
7. Serve hot with a dollop of yogurt or sour cream, bread and garlic clove on the side (this is not for everyone).
Store and reheat: Refrigerate borscht in a large pot you cooked it in for up to 5 days. Reheat by simmering on low in small pot only amount you are planning to consume.
Freeze: Freeze in an airtight glass container for up to 3 months. Then thaw on a counter overnight and reheat.

    I looked up your recipe a couple of weeks ago and made this last week! I have never had anything like this so I thought that I wouldn't like it or that I would make it incorrectly. It is beautifully delicious and I truly love it! My family is picky, except for one of my children who tried it, so I ate most of it myself and for many days! I am making it again today for a group of ladies. I'm sure that they will enjoy it and appreciate that they are eating something authentic from a beautiful country that has all of our hearts right now. 🇺🇲 ❤ 🇺🇦

    Yep. That's how we Ukrainians operate haha. We cook a huge pot of soup and eat it for days. So healthy and convenient!

    I think I ate like for a whole week too. AND froze a lot of it and gave it to my family. The 12 cups doesn’t look like a lot until you throw in all the cabbage and potato’s. It’s soooo much food!

    My son LOVES borsch and we grew beets this year specifically to make it. This might be my favourite recipe yet and will be my go to from now on. Both kids (10 &8) had THIRD helpings 🤩. I made a double batch which filled my big stock pot and used chicken stock (from a concentrated paste) and kidney beans this time but I look forward to trying the different variations in the future. Now I have a happy full family and a freezer full of healthy meals. Thank you!

    I made this because I wanted to have my own family recipe because my grandmothers recipe was lost. I added beef shank, oxtail and some pork belly to the beef stock. Anyway it came out soooo delicious. My Russian mother liked it and she said she hated borscht as a child. Apparently there’s some bad super sour borscht out there. But to each their own. lol Thank you for this recipe! I hope to pass it down to my own family one day!

    I grew up liking my mom’s Russian borscht, and then my friend made me Ukrainian borscht and it was incredible. I didn’t know there were different kinds, so when I got back home and my mom made me thin, pink borscht with little flavor in it, I was super disappointed. I’m excited to try this! It looks a lot closer to what my friend made!

    I have watched your vid a few times now, and I'm ready... I am absolutely making it this weekend (my shopping list is prepared), and I am absolutely eating it with a bite of garlic and some grainy bread with garlic and sour cream! I have been known to crunch down a clove of garlic when I feel like I'm getting a cold, so maybe I'm a little bit Ukraine in my ancestry! :D

    When my grandparents were still alive, they used to make it including the beet tops - that's how I remember it. I have yet to find any recipe that includes the beet tops.

    I made this recipe and I felt transported back to Rivne and Kiev. This is really authentic. Add some garlic rosemary bread to enjoy alongside the borscht and you have a memorable meal. And if you can find some high quality salo with Dijon mustard, even better. Слава Україні

    Live in Canada . Met a couple thirty years ago and she was born in Poland . Lucky me , she gave the recipe to me . Never she put all that other stuff in it . Beets , Onion , little garlic , That's it . And the Polish love their HAm . She diced /cubed ham ( not minced ) .Gotta see the ham and it must be slightly chewy . Voila

    I'm American, I love beets, I've heard of Borscht, and want to try it. Looking for cheap to make veggie based soups like Borscht and Gazpacho always wondered if the Borscht was served cold? Is it easy on the acid? ❤

    Is borscht served hot or cold? Everytime before we had it cold but I had it last week and they served it hot so I am confused.

    Do you mean pickled cabbage or sauerkraut? Yes you can but omit the vinegar and season borscht with salt to taste at the end.

    I too personally like cabbage to be added the last, so that it remains crunchy. But some people like very soft cabbage in their borshch, and that's fine. Borshch has hundreds of variations, so there's no wrong borshch.

    Borscht can be made with various ingredients, but traditionally, this way is not it. Ukraine is a poor country. The ingredients are usually much more simple. You can use pork for a tasty soup base, but traditionally it won’t have more than beets and maybe onions in it.

    Почти все правильно в приготовлении, только картошку кладут в начале, чтобы она почти сварилась и потом только капусту и позже всего, зажаренные на сковороде лук и свекла. Свеклу трут на терке с крупными ячейками.

    Ой беда. Это не украинский борщ! Абсолютно . Скорее всего это русские щи. У украинского борща абсолютно другой рецепт ,приготовление . Жаль ,что ,очевидно русская женщина ,пытается этот русский суп выдать за украинский борщ. Мы смеялись всей семьёй. Слава Украине!
