    We fry the beets and carrots until the sugars in them get caramelized, before boiling them. Some people treat the beets with vinegar in order to prevent them from discoloration.

    For all of the people saying that this is not real borscht: every single wonman in Ukraine makes her own version. In our family we don't even have beets in it, but we have it based on tomatoes and with cabbage. The name of the video isn't "Borscht", it's "Borscht as made by Andrew" whcih means it's the way his family makes it. Was I making this video, you would all say that borscht isn't borscht without beetroot.

    In my family we usually make borsch with beets, a little cabbage and some carrots... not much else, and it's still my favourite out of all variants I've ever had. We also make "doukhobor soup" which sounds like what you describe... lots of cabbage, potato, tomato... so simple... so good

    @@solmae Well here you have another one :) Barszcz which is the beetroot soup, schnitzel with fries and cabbage salad, potato salad which we call Salatka Jarzynowa (basically just vegetable salad with potatoes, carrots, green peas, pickled cucumbers, mayonnaise, apples and eggs.) We also have golabki which is cabbage rolls filled with either meat, onion or potatoes. Then there is bigos which is a stew made from cabbage (lol) and meat. Last is Zurek - a soup made from rye bread with sausage, mushrooms and eggs :D

    That version of borscht sucks balls. That soup is called "svekol'nik" and is a mere substitute. Borscht is originally made with pork and cabbage, carrots are usually fried together with onions, a LOT of garlic and vinegar added aswell. Beet is stewed separately and added in the end so that the soup doesn't lose it's color.

    Tbh I've never seen this version of borscht... I mean..... Every Slavic person I know including my family is doing the borscht with beef and cabbage into it. Andrew's version literally resembles nothing I've ever seen

    I would describe Ukrainian food as taking the simplest ingredients and put so much time and logic to them, that they become magically delicious. The comfort it brings is insane.

    We make the russian version, which also includes cabbage, a bit of vinegar, sugar and 2 tons of crushed garlic, added just before the soup is ready. It's usually cooked with meat, although the vegeterian version is also popular. No dried mushrooms, I didn't even know such version existed. Maybe to give the soup a meaty flavor, since it has no meat. Also, Borsht is served with sour cream. It's a must. Unless you're a monster.

    Im Italian and i m trying to make It today. I had never It before becouse It's completely unknown in Italy. The ukrainian immigrants do not love to speak about the cuisine of their country thinking that for italians It can look weird. Boiled red beets are cheap In Italy, € 1 for 4, big. In Italy the herb topping the dish Is unknown and i used fresh fennels leaves. Also sour cream Is unknown, and im going to use a soft cheese similar with cream. The oil used Is olive One.

    I. Frickin. Love. Borscht. I was born & raised in Alaska & the state's history is deeply rooted in a marriage predominantly between the two cultures, languages, & heritages of Alaska Natives and Russians. This creates a really unique landscape that you won't find anywhere else. And because of the very present & intertwined Russian culture, evidence of their occupancy is everywhere, but especially in the food. Borscht is versatile & hardy with the ability to provide sustenance to large families or groups of people for very little money, which is why it's a staple in Russian culture. It doesn't hurt that it's also damn delicious and I'm super excited to see Andrew sharing the Ukranian version with us!

    Ukraine is beautiful. Good friend's of ours recently went to Ukraine. (European hidden gem) and fell in love with the place. It is stunning. But, most of all they loved the food. In fact this couple who are big foodies and have been all over the world said they would love to retire in Ukraine when they are older (they are in their 30s) because the food is that amazing. Both are from Australia. One is from an Italian background and the other has a Asian background. They are sooo passionate about food- and out of everywhere they have been too Ukraine is their fav. This is a common story I find from any tourist who has a chance to be allowed in the country: they love it. Another thing I often hear is about how beautiful the women are over there. I love Ukraine. It is a lovely country with friendly people that is yet to be discovered. :)

    I’m from Ukraine, specifically Odessa and I have never seen leeks in borscht, its always carrots, potatoes, beets and cabbage plus chicken or beef. Also, the ones made in Ukraine tend to be a little oilier but I guess that’s a personal preference. if you make this, don’t forget the dollop of smetana (sour cream) at the end!

    This makes me so happy! We cook borscht differently - we preboil the beets and add them at the end (this makes for a more vibrant color), we add garlic at the end, and we grate the carrots in with the onions. We also add vegetable stock to make it more flavorful and for Christmas Eve we go all out and make вушка (little mushroom dumplings) to go into the soup. But overall, even though this isn’t my favorite recipe, I’m very excited about there finally being some Ukrainian food on buzzfeed - keep it up!

    I love this! It's good to get in touch with your roots. I never appreciated the food my Puerto Rican grandma made or the German food I ate as a child. Now as an adult I've tried to embrace both because it was the food that I grew up on and made me who I am. It may not be fancy, but it's home made with love.

    Pro tip: borscht is a bit like wine, it tasted better as it ages. we normally leave it to sit in a pot for at least a day before reheating it.

    Polish here. Last christmas made semi-traditional barszcz for a party at a friend's house and it was waaaaay different. I took some photos of my parents' Reader's Digest "Polish Cuisine" book and kept as closely to the recipe as possible. It took over a week. First I had to make beetroot acid which took 4 days (you put sliced beetroot in water and put a slice of rye bread on top and let it get acidic, then you strain). Then I made vegetable stock (and here's where I went non-traditional because I wanted more umami so I used shitake mushroom) and I boiled it for something like three hours, and then I finally simmered some fresh beetroot and leek in a pan, added it to the stock, added water, boiled, then added beetroot acid and served it. I also had to use a little bit of vinegar and a whole lot of pepper to bring it to where we wanted it but it was delicious. I've always hated christmas food because I'm a picky eater, especially anything with beetroot in it, but this year I made it by myself and it was amazing. I think this recipe is way sweeter than mine. Also polish and ukrainian cuisines can differ greatly even though we basically cook the same dishes with nearly identical names. Potatoes, tomatoes and carrot surprised me here. My family would sometimes add potatoes but that's about it. I think that generally potatoe is used to make the dish more filling but doesn't necessarily add to the taste. (I also take grave offence at adding fresh parsley and/or dill to any soup. My mother used to do it, and probably still does it, all the time cause, for some reason, she loves it. I hated it, I still hate it, it's a pass for me, the soup shouldn't need any grass on top to be tasty, it's tasty by itself, let it be)
